Update: this is freakin' delicious. Worth the effort because it's not too liquid-y, but still really creamy - great mouth-feel. And the CRUST! I have despaired of ever finding a really good keto crust that didn't require baking, but seriously, this is it. Just be careful of over-toasting the almond flour - watch it like a hawk and stir.

Your videos and recipes are really well done, you've been thoughtful and done a few little things to make it easier and quicker to follow - things such as highlighting the names of the ingredients so they stand out from the rest of the text in the recipe - I do notice those small things. No you cannot, the result will be drastically different. Please check out my Keto Sweeteners 101 video to understand the chemistry behind baking and why stevia and erythritol or so extremely different. :)

It's pretty similar without the gelatin as long as you whip the cream properly so that it is thick, that being said, it will get soft quickly at room temperature if you leave it out too long without the gelatin, so it's more important for situations where you are serving it at a party or something where you need it to hold up outside of the fridge for a while. :)
Check out my keto baking 101 video which explains the difference between coconut flour and almond flour and their different uses in recipes. In short, no you can't sub it, the texture and taste will be very very different. You can however use a different ground nut or seed flour.
