yeah but he is so famous that he is skewing the pizza world (at least East Coast US) to his overburnt, crispy tastes for pizzas. I, actually, I like CT pizza! I like that crisp stuff but I also love Neapolitan and classic NYC pizza and Sicilian and he rates them lower. I am afraid pizza places will start making more of what he likes and we lose all this diversity of pizza making which makes East Coast so freaking great!

Those pizzas, especially the second one, looked amazing. I'd add two tenths to those scores, Dave was already full and the place did not have the typical "vibe" the Prez prefers. If the place had an Italian name, was at least 30 years old with an old owner, we know those scores would be higher, errbody knows the rules.
OK, Dave, I booked a flight to NY for the first week of July. This is the first review that has compelled me to take action. I'm flying out of Los Angeles, CA. I'm making a trip around trying these last few Brooklyn pizza review video uploads you've made.
I live right by this place and its a must try. Some of the best pizza around. They also have a great whisky cocktail menu to pair with the pies when you dine in.

I hope good things are coming to this guy.
Dude has a small restaurant in operation in Brooklyn for 10 years. He knows what he's doing. I bet part of the humility about the scores was him knowing how many he's going to be turning away next week. Doesn't strike me as the sort of dude who's looking to make millions, more the sort of dude who cares about and enjoys performing his craft.

When the guy says "...and we can cook the shit out of that..." that's the proof that he's actually a pizza genius. He's basically saying he's done all his homework and can quickly put together a pie that he can throw into the oven and then get distracted and accidentally overcook for a few minutes and it'll still be good. I like the confidence. Dave obviously liked the pizza.
No I think what the man is saying is based on the style of pizza in the first review , he has to be delicate with the temp because there are thin and thick parts (look at the crust compared to the rest). If he blasts it too much part will burn and part will be soft . The second pie is more homogenous so he can blast it 😊
Wheated has been an oasis among the barren food option in that area (has great South Asian and Persian options, but nothing else) when I lived there 2013-2016. So glad they are getting a shine

The first pizzas served at Pepe’s were tomato pies (now sold as “Original Tomato Pie”) so it’s a New Haven thing too. Looks like an amazing little spot.
Hot out of the oven, Pepe's original tomato pies are my favorite there. You gotta eat them on the spot though. If I could get Pepe's sauce on a Sally's pie, you'd have perfection.
Owner is a humble and great guy. What the review doesn't make clear is that Wheated is probably one of the best whiskey bars in all of Brooklyn if not the greater nyc area. Over the years they amassed an amazing collection of whiskey. One of the only place I was able to find forresters "Birthday Bourbons". Great place to go for a pie and have a cocktail and sample a few rare whiskies.
Could tell dave loved and respected this guy and gave him genuine scores. Partly based on the fact the guy wasn’t fan-girling or trying to talk himself up. Just neutral and genuine. Great review
