It's been well over 35 years when I built something like this but I used a CD4069 hex inverter to monitor water level in a 50 gallon drum. I used pvc pipe with rivets at point to be tested for. Nice to see old school ways to solve a problem being shared. THANKS
Struth i run a clear hose outside my water tank and could see the level without all that work. Ran the clear hose from the tap attachment down the bottom. Simple cheap, no electicity

How many times you need to climb the rooftop per day? What if the tank is on 3rd floor roof and you live on the ground floor. We don't have a permanent stair/ladder to the place where the tank is installed.
Hey, you can use 10k resistors on the base of transistors to protect the transistors in case probes are shorted, though not very necessary. You can use an opamp too instead of transistor to make the circuit compact. LM 324 is general purpose opamp. You can check datasheets for better options. You can also combine transistors and an opamp too in the kit.
I have done a successful modification in this syatem at my home. I have placed one of the sensor electrodes below the water inlet into the water tank. So, when the corresponding LED glows, it indicates that water is actually flowing into the matter tank.

The way I do it is to tie a piece of string onto a float and put it in the tank, the other end of string (on the outside) tie a weight (slightly lighter than the float) as the water level goes up and down, so does the float, therefore telling you how much water is inside. Or get a stepladder and check it.
Of course I only need to look at that if the water input stop valve breaks or doesn’t work for some reason. Which has happened before, but I always knew how much water was in the tank

Diode number is not a critical thing here. You can use any diode that you have. Most common is IN4007. You can use OA79, 85 or 91 etc too that were used in radio. Don't use large pieces of diodes with several amps capacity, just a small one.

It would be better to turn off the lower level LED indicators once a higher level is achieved. For example 25% level indicator will turn off once the water level has reached 50%.

You can use your creative freedom to serve any purpose you want. A simple idea can change things drastically.
