I feel like "can't break blocks you placed" would be a better rule, because it'd make it solely about your own mistakes, and have nothing to do with the shape of the natural terrain.
You should've made the brick part into a foundation instead of the first floor. It would've given it more of a basement feel too. That way you could build stairs to the oak part, fill in the weird doorway, and fix that little stripped plank that you turned into a wood pile.
Pretty cool idea! I think, like the other comments said, allowing yourself to break the environment blocks would be a bit more logical. You wouldn't consider the world gen a "mistake" per se, I think.

I like the direction of the video and the time-lapse, but I find the camera to be turning too fast and at extreme angles to be a bit distracting. I think a wider and slower camera turn could help make the time-lapse less dizzying.
