If you don't have a metal rack that will fit at the bottom of your water bath canner you can always go old school and use a towel or cloth of some sort. I can't wait to have enough cucumbers to try this. Thanks!
I used the honey as well and it was perfect but I added few more dry ingredients like cloves prouder, cinnamen poder and a bit of hot pepper, but I love that fact that you can use the honey instead of sugar. haven't seen that yet on youtube.

Dude, this is basically the recipe I use. If you want exceptional relish with some spice, dice up a yellow Carolina reaper pepper and add to the mix. It has a fruity flavor that meshes so well with the relish and the pickling spices take out heat on the high end. It ends up spicy but not too spicy.
Absolutely NOT! Carrots are banned! just kidding, dear....you can try anything you want! Add carrot bits! Add extra black pepper...cooking is all about just trial....WHAT SOUNDS GOOD? and triumph...hey, I have good food to eat! What the hell? ☺️🥰 I’m also like you...or I was..but I learned you can’t really screw up a recipe if you’re just imagining taste combinations (food, spices, herbs) and throwing in what sounds good to you. Mom’s pickle relish 9 pounds pickles 2.5 pounds onions 1/2 cup salt 2 quarts water Grind above ingredients and soak overnight Then squeeze water and salt out by hand Mix 6 cups sugar 1 quart vinegar 3tsp celery seed 3tsp mustard seed 3tsp turmeric ADD above mixture to drained pickle mixture. Boil 5 minutes Pack into hot jars, water bath for 10-15 minutes Yields 9 pints

I can pickle relish, and put it in my potato salad, macaroni salad, and in tuna salad. So many ways to use it.

Looks similar to what we call Chow Chow in Georgia too, except my family always made our Chow Chow spicy with some hot peppers added.

Sorry Kaleb. This recipe needed sugar. The 1/2 cup honey is just not enough for 5 cups vinegar.
why do most recipes call for pickling whole cucumber: water and vinegar, but for relish just vinegar? do you have an explanation?
