How to Can Spicy Dill Pickles

    Ingredients:
    - 11 lbs cucumbers
    - 3 cups apple cider vinegar
    - 1 cup white vinegar
    - 4 cups water
    - 3 tbsp honey
    - 2 tbsp canning salt
    - 5 tsp dill seed, separated
    - 10 cloves garlic, peeled and smashed
    - 10 hot peppers (or 1/2 tsp red pepper flakes per jar)
    Supplies:
    - 10 pint jars with lids and rings
    Instructions:
    - In a 6-quart saucepan, combine the two kinds of vinegar, water, honey, and salt. Bring to a boil and reduce to a simmer.
    - To prepare the cucumbers, cut off 1/2-inch on each end and discard. Slice 1/4-inch slices and set aside in a bowl. If you aren’t using fresh cucumbers, soak the cucumbers in ice water for 2 hours.
    - To each sterilized pint jar, add one hot pepper or red pepper flakes and one smashed garlic clove. Pack cucumbers in each jar, leaving 1/2-inch headspace. Add 1/2 tsp dill seed on top of cucumbers.
    - Pour prepared brine over prepared cucumbers, leaving 1/2-inch headspace. Wipe the rim of the jar and place on the lids and rings according to package instructions.
    - In a prepared water bath, process the jars for 10 minutes, adjusting for altitude according to the USDA canning guide.
    - Remove from the water bath and cool jars on a rack for 12 hours.
    - Store in a dark place and enjoy anytime after 2 weeks.

    Just recently found your channel and have fell in love with it. I love canning each harvest season. I just finished up doing applesauce and it is so delicious. These pickles look awesome, I am definitely going to try this recipe.

    I LOVE U!!! Finally a channel on canning that doesn't make a million jars at a time. I'm new to canning and live in an apartment so my space is limited. Being able to make 3 to 5 jars at a time really makes a difference and keeps me motivated!! I subscribed immediately. Thanks a bunch!

    I use a small piece of horseradish root for crispness. Also don’t overheat.

    Perfect timing and great instructions. About to can for the first time in my life by myself. Very nervous because I know everything has to be sanitized and you’ve got to hear the “pop”. I’ve got a cucumber avalanche so I’m making some pickles. Thank you!!!

    You make it so much less intimidating. Love that you use honey in them. Hey if you only grow cucumber to make pickles check on those pickles in the garden. I am gonna go check on my slaw. 🤣

    The recommendation to use pickling salt versus regular table salt has nothing to do with grain size. Regular salt is iodized and has a higher mixed mineral content compared to pickling salt. Those extra compounds in regular salt cause pickling liquid to become cloudy.

    This might sound stupid, but is boiling the water necessary? I don’t make large batches, so it’s just one or 2 jars at a time. I’ve always just put in all the ingredients and let them sit in the fridge for a day (shaking up the contents every few ours). They have always seemed to come out very good!!

    Where I live, canning salt is not available and Amazon is outrageously priced. So I'm a little stuck here with what to do? I won't be making pickles right now anyway. Still would like to know the measurement for regular salt. I think Kaleb is the best, love watching your videos!

    Love it. Question though can you sterilize the jars in the dishwasher now? We always did the water bath, which is a pain with a small kitchen...what do you think? I am going to the valley and will be picking up some pickling cukes this weekend.

    Hi, is it really necessary to take ring off before storing, won't it open? Little scared to try it. Love this method and I tried the beet receipe of yours. Everyone loved them, but i never knew you had to take off ring? lolo. You make it so fun to try and easy to follow. I felt very comfortable.

      Hello! The reason we should remove the rings is you want to make sure the lid seals correctly, if you remove the ring and the lid is not sealed it would not have been safe to store. We need to make sure the lids are properly sealed!

    I used tai peppers in my pickles a few years ago and they were fire dept hot, I couldn’t eat them. I love a Spicy dill pickle so now I just stick to chili peppers.

    Remove the ring because bacteria can build up between the ring and the jar.

    I canned my first pickles this year. They turned out too mushy. Do yours turn out crisp? I grew up eating my mom’s canned veggies and fruit. I remember the texture being different from store-bought, but nowhere near as mushy as my pickles were. Any thoughts on what I did wrong. Sadly, my mom passed away a few years ago so I can’t ask her for advice.

      you need to add 1/8th teaspoon of "pickle crisp" to each jar before canning. This will ensure that the cuckes stay crisp - go to the Ball canning web site. He missed a LOT of important steps in this video.
