Ah Gnocchi, who can resist them, no one I know. Quite a novel idea using a pipping bag, good call, not something I have used but will definitely try it that way, and love the idea of grated feta as well as parmesan, I am Greek but my children are half Italian to so I learned how to cook Italian, and this is their most favourite of all time, but next time they will have the Greek element added tadda, because I just have to, right!! lol
I used to know how to make good gnocchi when I was younger, but the last time I tried with a different recipe, it didn’t end well. Too chewy. I’ve been reticent to try again, but this looks simple. Logical too about the flour, and I like the idea of just using the yolk so it’s not too gloopy. The sauce will be good to make when all my little tomatoes finally ripen all at once.

It’s a preference. Pressing the gnocchi holds the sauce well but then you lose the beautifully smooth and silky texture.
