- Canary Potatoes, also known as "Papas Arrugadas," are a traditional Spanish dish from the Canary Islands. They are small, wrinkled potatoes cooked in salty water and often served with a spicy pepper sauce called "mojo picón."
Papas arrugadas is considered a staple of Canarian cuisine and is often served as a side dish to fish dishes and other local specialties. Its simplicity, combined with the flavorful mojos, showcases the traditional and rustic culinary style of the Canary Islands.
This dish offers a taste of Canarian culinary tradition and reflects the islands' historical reliance on locally available ingredients and simple, hearty cooking methods.

What I love about your channel is that when you say the recipe is easy, it really is.
Thank you so much 😊YES! I tell it as it is - no nonsense on this channel. Thank you. Best, Rik
Totally agree. I don't want to cook fancy food, I want to cook meals that are wholesome and nutritious.
I actually can make a quick version of this recipe, because roasted bell peppers and roasted garlic are two things that are always in my freezer! 😋
They are some of the best ingredients to have on hand. I have red bell pepper puree or paste in the fridge all the time. Thank you. Best, Rik
@@BackyardChef Any chance you could make a video on frozen or pureed ingredients to have on hand?
9.40 in... Those potatoes would get no further. I would be tucking in. I love small potatoes done in their skins, a little pile of salt to dip into and maybe a pot of butter.....
I love this addition of the red pepper sauce, think this will be one to use again and again... I can see this as a substitute to potato salad
So jealous of you sitting down to eat this. You talk about charring the potatoes, my Mum used to call this tisselling! Some nights they would be very tissled ie burnt! (actually most nights)..... and Dad would come through the door from work with the phrase 'aaah my favourite type of potato tonight....' yes we ate them if we were hungry enough, drenched in gravy or butter or good old HP sauce (not a ketchup family)... even seen Dad Hunt for Branston pickle....
Thank for the recipe Rik, looks fab. Thank you for the wee memory jog!!!
Thank you for sharing your memory. Loved reading this. Thank you. Best, Rik
Over here in the US, a very fine grocery store named Wegmans has a great product on their amazing produce aisle. A bag of salt potatoes. Basically the exact potatoes you have there, but with a large bag of salt, with instructions to cook. I'm pretty sure that would be perfect with your pepper sauce.
Sounds wonderful. Thank you for sharing. Thank you. Best, Rik
Syracuse potatoes
@@TheWibbo I've never them called that, but my friend here in Maryland, who introduced to them, is originally from Syracuse, and once worked at Wegmans.
I love watching you cook, Rik. So many tips, treats, and surprises ❣
Thank you. Appreciated. Best, Rik
Great to see your followers numbers climbing. Love from Australia 🇦🇺
Thank you. Love to Oz. Best, Rik
I have to make this! Just the spuds alone are mouthwatering but the sauce takes them to the next level… cheers from Melbourne Australia 🇦🇺
Cheers mate. Thank you. Best, Rik
I love you backyard chef! You bring excitement to cookery.delx
Had these in a restaurant in the Tenerife mountains and they were amazing
Thank you. Best, Rik
Adeje? I worked there for a few years in 92 and I am guessing that you're talking about the Chicken Shack (Otello's)
That place has been open for at least 30 years 👍
@@JammyGit that sounds right mate
@@rexadillion Speaks for itself that it's still open after all these years. Cheers bud
Today I learned an easier way to cut up a bell pepper, thankyou. In addition, that potato dish sounds scrumptious! (craving them lately) It's so much fun to watch you laugh at trying to pronounce Spanish words! Good times!
Thank you. Appreciated. I love Spanish but cannot for the life of me speak it. Best, Rik
Oo Rik these potatoes are definitely right up my street I’m a saltaholic and whole baby potatoes cooked in their skins what’s not to love I could eat them without any sauce , maybe just a knob of butter lol 😋thank you for expanding my cooking skills and my waistline lol 🤣Amanda xx
Ha ha ha - your thanking at the moment - I feel a telling off coming! Thank you. Best, Rik
Gran intento de pronunciar Español. Nice one Rik
¿Estás seguro? ¡Gracias! Thanks, mate. Best, Rik
That will be served at my 4th of July BBQ for sure. Thanks Rik.
Nice one! Have a large jug of Sangria! Thank you. Best, Rik
This fellow just incites a relaxed attitude to cooking. Peace and goodwill
Thank you. Best, Rik
Since my youth, when I went there often, I didn’t have the occasion to have these.again. I’ll prepare them in my little french kitchen. Thank you!
Thank you. Best, Rik
The original spices from the country makes a huge difference in flavor. I use Mexican spices for my food too. I saw someone boil bell peppers to peel them. I've not tried this yet. Have you? I prefer the roasted because the flavor is better.
I have and it works fine. Roasting is better - to really top it - over the BBQ smokey in a bag, steam, peel skin amazing flavour. Thank you. Best, Rik
What an interesting surprise,"mojo picón" done by a great chef.Thank you for teaching us so well
Wow! Thank you. Best, Rik
Ahhhh this is a dish from my childhood!!! Thank you for making this, I'll have to give this recipe a go so my partner can try it ☺️
Thank you. Best, Rik
Don't worry about your pronunciation. Even for a Spaniard from the mainland, it's challenging to pronounce it like a true Canarian. You should try some recipes from Aragón! A good 'Ternasco de Aragón' or 'Trenza de Huesca'!
Thank you very much! Thanks for the suggestions too! Thank you. Best, Rik
Excellent looking forward to making this and thanks for some more tips along the way Rik.
Cheers, John. Thank you. Best, Rik
Good gordon id never off the couch after eating that defo food coma 👍🏼❤️
What a way to go. Thank you. Best, Rik
@@BackyardChef 😂😂😂
Roasted peppers rule. Always take the time to do this if it fits the recipe. I bet a preserved salted lemon would work good here. There is absolutely no way to screw up potatoes of any style unless you burn them. I have never seen or heard of this recipe but...I can tell from the technique that they are unbelievably good. So simple, I will be making these. Thanks Rik.
Thank you as always. These are very good indeed! Its one of those dishes if its in front of you, you keep coming back for a another, another. New York has a style of potato nearly identical to these - Syracuse Salt Potatoes. Thank you. Best, Rik
I had these on Gran Canaria but it was ages ago. I will make them soon.
Thank you. Best, Rik
@@BackyardChef Thank _you._
I wanted to make the potatoes in the weekend but I couldn’t wait and I made them today. I don’t have sea salt so I used table salt. I am a lazy cook so I put the cooked potatoes in the oven on a bed of salt on 150 C until they “dried out.”
Simply the BEST ❤
Thank you. Best, Rik
That looks like a lovely snack, party food. Crunchy potatoes and a nice dip. Thanks for sharing, Rik.
Thanks for watching as always, Thank you. Best, Rik

Hi Rik. My 90 yr old mother in law who spent much time in England wanted to know if you have made pulled pork applesauce sandwiches. We love your channel and now you hear us saying.... looky here!! We are having so much fun watching your videos and cooking your meals!!! Thanks
What a great suggestion, it will be uploaded. Thank you. Best, Rik
@BackyardChef thank you that will make her day. She goes by mama Ann. Lol
Lovely new potatoes, wondering if your method of peeling the peppers would work with tomatoes, thank you.
Yes, absolutely it does. It makes a fantastic tomato puree/paste. Thank you. Best, Rik
Your Spanish accent is brilliant 👍
Ha ha ha, thank you. You are very kind. Best, Rik
YES we are Rik dikted to your channel my fab favorite cooking channel 👍 (from the DWI )

Syracuse salt potatoes! In upstate New York, they eat these dipped in melted butter or sour cream. Yum.
Thank you. Best, Rik
We go to gran canaria regularly and me and the wife love these and yours look fantastic great job again rik🙂
Awesome! Thank you! Best. Rik
Wow Rik another winner with me🤩 l love unadulterated potatoes so this one l look forward to cooking. As a child l loved the crispy skins at the bottom of dried boiled potatoes 😊😊
Thank you. Best, Rik
I used to live in Tenerife back in the early 90s, and there's one restaurant that I can recommend.....I would bet it's still open these days. It's up in the hills in a place called Adeje, and officially it's called Restaurante Otello's, or to all the locals and residents it was known as The Chicken Shack.
Funnily enough, chicken was the main thing on the 'menu' and you would just order chicken for how many of you want it, and it'd be served in a trough, and with a few bowls of papas Canarias and especial ensalada......not forgetting the red & green sauces 😆
Oh and I remember all the Canarian potatoes I ate in my 3 years did actually have the skins still on 👍
Anyone who's going to Tenerife soon, go to the Chicken Shack and thank me later......Sit outside for some beautiful views of Barranco del Infierno ✌️
Thanks for sharing. Thank you. Best, Rik
@@BackyardChef - Ta mate, and ta for the recipe. I've been back in England about 25 years and have tried many times to recreate papas Canarias and haven't been able to get near to authentic so far.....but I didn't know about the dry cooked in salt trick, and I think that's the key.
I'm saving this to my recipe videos and will let you know how I find yours....Last recipe I tried called for skin off spuds unlike yours 👍
A good sauce can be used for many things. I can see using this sauce for potato salad.
Agreed! Thank you. Best, Rik
As usual you are making my mouth water! But as it’s 2am I’m going to have to wait 😂😂❤❤
No boil the potatoes - eat for for breakfast. Ha ha ha, sorry! Thank you. Best, Rik
Hello there x that potato dish looking gawjus. Thanks x
Thank you. Appreciated. Best, Rik
This looks amazing. I'll definitely be trying this! Thanks, Chef Rik! 🧑🏽🍳
Thank you. Best, Rik
It looks fantastic. My son lived in Spain for a wee while and said that this dish is really nice. I'd like to eat this. It'll be nice served with steak. My mooth's watering already. Nice one, Rik.
Spot on, Liz. Steak is served with these potatoes as a side, lovely indeed. Thank you. Best, Rik
BBQ fare! Now this is a must for the next one. The bell pepper and garlic trick is a must and I can’t wait to try this recipe.
Rik you are definitely invited to our next bbq 🌞👏
Thank you. Best, Rik
Just a note, in the USA "chili powder" is not just powdered hot chilis, but also a large dose of cumin and usually other spices. It's the flavor of the chili dish, not the chili vegetable.
Thanks for the info! Thank you. Best, Rik
THANK YOU RIK, you done a brilliant job on THAT, you are spot on about the mojo sauce I have made the raw version and the cooked version the raw is very harsh, I was munching on couple i made the other day they keep well in the fridge and warmed in the microwave. I knew you would smash it.
Pleasure mate. Thank you. Best, Rik
I make a lot of wraps, this would be a great sauce in a wrap Rik.....
Thank you. Best, Rik
Fabulous. I love the great array of recipes you cook. Could you do one of cooking a brisket?
Thank you. Best, Rik
So simple and i bet delicious. Thx rick definitely trying this one!
Thank you. Best, Rik
These are very good. I usually have them with a curry chip sauce. 😊
Thank you. Best, Rik
Great food for a party.
Thank you. Best, Rik
For goodness sake Rik, wrinkled potatoes? I've got those! 🤣😉
Ha ha ha, you and me both. Thank you. Best, Rik
Even quicker. There's just me. I poke a few chats with a fork. Rub with oil n salt then into the microwave 3 mins each side, until soft. Then 10 mins on high in a standard oven until browned. While doing my peppers in the oven at the same time.
Fantastic! Great tips! Thank you. Best, Rik
Hi Rik, I tried these in Gran Canaria though because I don't like red or any other peppers come to that I just lightly crushed them and topped them with butter, they were delicious along with the steak and fresh tomatoes 👍
Now you are talking! Thank you. Best, Rik
Need to do this. Looks good
Thank you. Best, Rik
Looks so delicious ❤
Thank you. Best, Rik
Nice bit of sauce Rik lol
Thank you. Best, Rik
Delicious!! I *love* potatoes. And these are again so well cooked. And I agree on the sauce. That's a taste explosion with the roasted garlic and pepper.
Agreed! Thank you. Best, Rik
Going to try this as a love spuds, although at first i thought the spuds looked ready for planting.
Thank you. Best, Rik
Buenisimo!

Ooo, another potato recipe! Yum!
Thank you. Best, Rik
Never heard of this Rik but I’m sure going to try it, it has all of my favorite things to cook with😊 thanks for sharing .

Thank you. Best, Rik
I’m with you! I love Spanish food but I don’t like raw garlic.
Thank you. Best, Rik
Similar to Syracuse (New York) salt potatoes.
Very similar - nearly Identical. Thank you. Best, Rik
That has to be outrageously delicious, and that sauce is multi-purpose; you can use it with other preparations, such as chicken, fish, and seafood. Rik, I'm just concerned about scorching the pan while drying out the potatoes. I'm thinking you used a non-stick aluminum pan where dishwashing liquid and water can be left to simmer on the stove and will lift the scorching (?)
I actually used an old stainless steel pan. Yes there is some scorching with this method. Thank you. Best, Rik
In Yorkshire or trad UK tucker, did you use preserved lemons?
No just a lemon. Thank you. Best, Rik
Rik glad to hear the pronunciation disclaimer in today video of your pronunciation of Papas Arrugadas Canarian Potatoes with your Yorkshire accent. I would hate to see a quified chef like yourself mispronounce it and stir up the hairs on the neck of @DEAJP10 your resident pronunciation troll 😂😂😂😂. They look delicious my friend. Cheers
Ha ha ha - I have some moaners - funnily enough they never complain about the cooking - always complain about the way I speak!!!! Ha ha ha - I think you already know - I have no interest in them. This is a cooking channel to help folks cook. Thank you, mate. Best, Rik
Will try this for sure.how high the oven for smoking the peppers?
Have made some of your recipes and they were great!!
High - 230c 460f Thank you. Best, Rik
What heat for oven for peppers please?
180 - 200c 160 - 400F no time until they black. Thank you. Best, Rik
If you put more salt in at time of boiling to copy salt water all the spuds have a salt cover. No need to add further salt.
Thank you. Best, Rik
What difference will it make if we leave the pepper skins? (either skin on or taken off and put it in the blender with the rest of the pepper) I generally like to keep as much fibre from veg in a dish as is possible
No worries, leave them and blend. Thank you. Best, Rik
LOL… I watched intently trying to figure out what was Canadian about this dish. Please pour me a cup of coffee…
Ha ha ha. No worries - something stronger! Thank you. Best, Rik
Spuds served with Maple syrup for breakfast?
Not Canadian it's canarian
Lol 😂
Not Canadian- easy to confuse but not what he said
Is there a substitute for red wine vinegar?
White wine vinegar. Thank you. Best, Rik
Rok taking the pith again
Thank you. Best, Rik
Something to cook if you're on a tight budgie?
Thank you. Any budget! Best, Rik
taking the pith with those peppers😐
Thank you. Best, Rik
Not bad with the pronunciation, but you're leaving out a syllable from "arrugadas". You're saying "arrugas". So instead of "wrinkled potatoes", you're actually saying "potatoes wrinkles".
Thank you so much. Best, Rik
Hi Rik, I'm afraid you got the recipe wrong for the potatoes. You need a lot of salt in the potatoes, then you have to cook them until the water has evaporated, which leaves the potatoes white with the salt covering them. I know this because I lived on Tenerife for several years. Hope this helps you in future.
Thanks for the tips! Yes that is a way! There isn't just one way to cook - you do know that! I lived and cooked on Lanzarote too! Thank you. Best, Rik
