    Ingredients:
    - 1 kg of small, new potatoes (preferably with the skin on)
    - 250 grams of sea salt
    - Water to cover
    Mojo Picón Canario Recipe
    Ingredients:
    - 1 large red bell pepper (toasted optional for better flavour)
    - 1 teaspoon ground red chili (adjust based on heat preference)
    - 3 cloves of garlic (toasted optional for better flavour)
    - ¼ Lemon
    - 3/4 teaspoon of ground cumin
    - 1 teaspoon of smoked paprika
    - 1/2 teaspoon of sea salt
    - 2 tablespoons of red wine vinegar
    - 50 ml of olive oil
    - 1 slice of day-old bread (optional for thickness)

    9.40 in... Those potatoes would get no further. I would be tucking in. I love small potatoes done in their skins, a little pile of salt to dip into and maybe a pot of butter.....
    I love this addition of the red pepper sauce, think this will be one to use again and again... I can see this as a substitute to potato salad
    So jealous of you sitting down to eat this. You talk about charring the potatoes, my Mum used to call this tisselling! Some nights they would be very tissled ie burnt! (actually most nights)..... and Dad would come through the door from work with the phrase 'aaah my favourite type of potato tonight....' yes we ate them if we were hungry enough, drenched in gravy or butter or good old HP sauce (not a ketchup family)... even seen Dad Hunt for Branston pickle....

    Over here in the US, a very fine grocery store named Wegmans has a great product on their amazing produce aisle. A bag of salt potatoes. Basically the exact potatoes you have there, but with a large bag of salt, with instructions to cook. I'm pretty sure that would be perfect with your pepper sauce.

    Today I learned an easier way to cut up a bell pepper, thankyou. In addition, that potato dish sounds scrumptious! (craving them lately) It's so much fun to watch you laugh at trying to pronounce Spanish words! Good times!

    Oo Rik these potatoes are definitely right up my street I’m a saltaholic and whole baby potatoes cooked in their skins what’s not to love I could eat them without any sauce , maybe just a knob of butter lol 😋thank you for expanding my cooking skills and my waistline lol 🤣Amanda xx

    The original spices from the country makes a huge difference in flavor. I use Mexican spices for my food too. I saw someone boil bell peppers to peel them. I've not tried this yet. Have you? I prefer the roasted because the flavor is better.

    Don't worry about your pronunciation. Even for a Spaniard from the mainland, it's challenging to pronounce it like a true Canarian. You should try some recipes from Aragón! A good 'Ternasco de Aragón' or 'Trenza de Huesca'!

    Roasted peppers rule. Always take the time to do this if it fits the recipe. I bet a preserved salted lemon would work good here. There is absolutely no way to screw up potatoes of any style unless you burn them. I have never seen or heard of this recipe but...I can tell from the technique that they are unbelievably good. So simple, I will be making these. Thanks Rik.

      I wanted to make the potatoes in the weekend but I couldn’t wait and I made them today. I don’t have sea salt so I used table salt. I am a lazy cook so I put the cooked potatoes in the oven on a bed of salt on 150 C until they “dried out.”

    I used to live in Tenerife back in the early 90s, and there's one restaurant that I can recommend.....I would bet it's still open these days. It's up in the hills in a place called Adeje, and officially it's called Restaurante Otello's, or to all the locals and residents it was known as The Chicken Shack.
    Funnily enough, chicken was the main thing on the 'menu' and you would just order chicken for how many of you want it, and it'd be served in a trough, and with a few bowls of papas Canarias and especial ensalada......not forgetting the red & green sauces 😆
    Oh and I remember all the Canarian potatoes I ate in my 3 years did actually have the skins still on 👍
    Anyone who's going to Tenerife soon, go to the Chicken Shack and thank me later......Sit outside for some beautiful views of Barranco del Infierno ✌️

      @@BackyardChef - Ta mate, and ta for the recipe. I've been back in England about 25 years and have tried many times to recreate papas Canarias and haven't been able to get near to authentic so far.....but I didn't know about the dry cooked in salt trick, and I think that's the key.
      I'm saving this to my recipe videos and will let you know how I find yours....Last recipe I tried called for skin off spuds unlike yours 👍

    Just a note, in the USA "chili powder" is not just powdered hot chilis, but also a large dose of cumin and usually other spices. It's the flavor of the chili dish, not the chili vegetable.

    THANK YOU RIK, you done a brilliant job on THAT, you are spot on about the mojo sauce I have made the raw version and the cooked version the raw is very harsh, I was munching on couple i made the other day they keep well in the fridge and warmed in the microwave. I knew you would smash it.

    Even quicker. There's just me. I poke a few chats with a fork. Rub with oil n salt then into the microwave 3 mins each side, until soft. Then 10 mins on high in a standard oven until browned. While doing my peppers in the oven at the same time.

    Hi Rik, I tried these in Gran Canaria though because I don't like red or any other peppers come to that I just lightly crushed them and topped them with butter, they were delicious along with the steak and fresh tomatoes 👍

    That has to be outrageously delicious, and that sauce is multi-purpose; you can use it with other preparations, such as chicken, fish, and seafood. Rik, I'm just concerned about scorching the pan while drying out the potatoes. I'm thinking you used a non-stick aluminum pan where dishwashing liquid and water can be left to simmer on the stove and will lift the scorching (?)

    If you put more salt in at time of boiling to copy salt water all the spuds have a salt cover. No need to add further salt.

    What difference will it make if we leave the pepper skins? (either skin on or taken off and put it in the blender with the rest of the pepper) I generally like to keep as much fibre from veg in a dish as is possible

    Not bad with the pronunciation, but you're leaving out a syllable from "arrugadas". You're saying "arrugas". So instead of "wrinkled potatoes", you're actually saying "potatoes wrinkles".

    Hi Rik, I'm afraid you got the recipe wrong for the potatoes. You need a lot of salt in the potatoes, then you have to cook them until the water has evaporated, which leaves the potatoes white with the salt covering them. I know this because I lived on Tenerife for several years. Hope this helps you in future.
