- In this video join me as I attempt to make a Dosa stall at home. We recently wanted to eat a family ghee roast dosa but we didn't find the crispiness we expected in the dosa and we decided to make that dosa right at home. I have seasoned the cast iron griddle with flax seed oil but any oil with neutral flavor and a high smoke point will work. I was surprised to get such good results with one day of seasoning. We also made some parottas for dinner.

Steffi a small suggestion.To season any kind of tawas you can use the big onions (cut into two pieces) and dip in oil and apply evenly for 5-minutes continuously on the tawa and flame should be on medium.you can get even the first dosa as paper roast.plz Have a try.Happy cooking.

After heating the tawa with 5 tablespoons of oil on high flame, bring down heat to medium flame and fry finely chopped onions for 15 minutes covering all areas of the tawa by moving the onions around until the onions are dark brown almost burnt
Clear the tawa and start making dosa
Edit: Quantity of onions depends on the tawa size You may need 250 to 300 gms of onions for a tawa of your size
The idea is to cover the whole tawa area with the frying onions

Eppovume for cast iron the way you seasoned it fine. Right before doing the first dosai cut a red onion into two and poke one half with a fork and slide the cut flat surface of onion across the whole cast iron while it’s smoking hot and having a thin film of oil. It will sizzle as it slides bit after that the dosai will come properly. Till you feel dosai comes fine , you can rub the onion over cast iron inbetween dosai too. Hope this helps.
