- Super easy and delicious almond muffins recipe! Just mix everything together, bake and these soft, yummy and simple to make muffins are ready to be served with your cup of tea or coffee in no time.
So soft and fluffy, you will never buy muffins again!
This recipe makes 12 almond muffins.
Prep time: 10 minutes.
Baking time: 20 minutes.
Total: 30 minutes.
TOP TIP: I recommend using scales to measure the ingredients, especially flour.
300g (2+1/2 cup) plain flour
1 tbsp baking powder
1/2 tsp salt
3 eggs
150g (3/4 cup) sugar
150ml (2/3 cup) melted and slightly cooled unsalted butter
150ml (2/3 cup) milk
1 tsp almond extract
1 tsp vanilla extract
100g (1 cup) chopped almonds
50g (1/2 cup) almond slices
Bake in preheated oven at 180C / 355F / gas mark for 20 minutes or until toothpick comes out clean. Every oven is different, baking times may vary slightly.
