- Facing off against a supersized traditional Irish Boxty Challenge at The Brick Oven in Bantry, Ireland! Challengers have 45 minutes to finish their 3kg Beef n' Guinness Irish Boxty which includes about 1.5kg of boxty (or potato pancakes) and about 1.5kg of traditional beef n' Guinness stew, in order to win their €50 meal for free, a groovy t-shirt, and a spot up on The Brick Oven's Wall of Fame!

About Me:
I'm a 5'2 former women's physique bodybuilder on a mission to sample delicious foods from around the world! Love the way Katina made that look like she was just eating a normal dinner like a big roast or something. Didn't even look like she struggled at all eating 3kg of meat and potatoes.. she must work out like crazy to get away with doing all these food challenges and staying so small!

Randy missed out when he opted for the haddock. Tasty as that probably was, you DON'T refuse a Beef and Guinness stew. Unless maybe he felt that it would have been too heavy.
Anyway, that looked good and I'm glad you enjoyed it! IF you've eaten at Jewish buffets or dinners I think Latke will never taste the same way! Great that the pancakes weren't so dense or doughey. Definitely a challenge I'd like to take on!
You two should totally start a vlog/couples channel, showing everyone the travel, fitness and food (not challenges) you guys explore and enjoy. I'd definitely love to see more of those amazing views in Ireland. Great job owning this challenge!!!

Thanks for the Vid, it brings back very fond memories. My wife, cousin Tim and myself stayed at the Atlantic Shore B&B almost 20 years ago. We had eaten at the Brick oven a couple of times and found their pizza absolutely delicious. The pepperoni was in little strips and very spicy. So happy to see they are still open. It looks like they made the restaurant larger. Ireland, truly a wonderful country, with lovely people. I hope you got a chance to see Gougane Barra National Forest park. St Finbarr's Oratory is amazingly beautiful.
I think Katina and Randy are possibly the nicest Americans ever. Lovely people.

I would have thought the fish version would go down quicker, as fish is much lighter than beef, but as you said, that beef was real tender.

I thought the same thing. I mean, bacon, sausage, carrots, onions, and potatoes? What's not to like?
Coddle is literally a stew with left over sausages and bacon. It's not something I've had before since I'm in Northern Ireland but I have eaten bacon stew before and it was delicious
A standard beef stew here is potatoes, carrots, onion, beef chunks, usually dusted in flour before searing, then added, and everything is cooked in either beef or vegetable stock.
Some people add other root vegetable such as Turnip or parsnips

You are doing fantastic, most especially only having started in the last few years.
Now I love friendly rivalries and it is supposed to be competitive.
I hope while you were on your trip you might have been able to take on a head to head w/ Adam Beard Meats Food.
I know Randy and friend took on a full English Breakfast challenge a few years back.
Now I like his style and even with a head start off several years I do feel he might one day be your equal.
You finished the Hard Rock Cafe Challenge and Beard had some issues eating "chips" and the brownie.
Kidding aside you and Randall are smiling, laughing and having so much fun!
