Another thing I do is pour leftover grits into a small loaf pan and refrigerate. After they chill you can slice it like bread and fry it in a skillet or even grill it on a grill. So easy. Aha! Now I know how to make REAL grits! I was born and raised in the North, but I was introduced to grits in college in South Carolina, and I've been hooked ever since. The grocery stores here in New Mexico only carry instant grits (BLEAH!) but thank the grits gods for Amazon. I discovered Geechee Boy Mills (soon to be Marsh Hen Mill) Speckled Grits awhile back, and I haven't used anything else since. I find I like my grits better using sea salt. Probably all in my head, but I think sea salt has a sharper flavor, so I can use about half as much salt as would be the usual. Butter gives a much better flavor than margarine, in my opinion, especially when using European-style butter (Trader Joe's, Kerrygold or Plugra, etc.) I also like a hefty (if not healthy) dash of grated Parmesan. I'll have to try it with milk - I'd never heard of that. Using Parmesan also makes grits creamier, I think. Now that I think of it, one of these days I'll have to try 'em New Mexico style with a bit of mild green chile added, and see if that works. I'll have to wait until one of my former co-workers (I'm retired) gives me some home-grown and roasted green chile, though -- the frozen stuff in the stores loses most of the lovely green flavor. Right now is chile roasting season! Thanks for taking the time and effort to make this video. It brought back memories of some of the wonderful Southern cooking I experienced in my years in SC. That's where I learned to like a lot of things that my mother's "English Farm" style cooking made inedible.

Always use a little bit of milk in my grits and that made them a a little bit creamier tasting and the butter, too, but you know the whole secret is keeping whisked, and the Heat turn down at right time, love the video!

My cardiologist said it's better the heart has know blockages. After so many years making grits i remix now. I add seasons before adding the grits and i add milk at the end. Plus, it tastes awful. Some medical doctors parrot that which they were taught in medical school until they retire -- wholly oblivious to new research. A good medical doctor stays abreast of medical science as it progresses.

This is almost exactly how my grandmother made her grits. She would first cook bacon in the pot then add the water, milk, butter, and grits. As the grits cooked she would break the bacon in peices then towards the end of cooking the grits she would add the bacon chunks and stir them in. We would add more butter to the grits after pouring in the bowl. Definitely gonna try your recipe! Looks amazing 😋
I used to use margarine for all my baking and cooking along with crisco, because my mom and grandma used it, until I learned it was unhealthy for you. When I moved out and was buying my own groceries. That's when I also realized that butter is "healthier" but also more expensive. I now get mine at Costco to save some money lol Great video, I only ate grits at school my mom didn't make them, she did make corn meal mush, a little butter, milk, and sugar and you were set.

I innerstand tryin to match your kitchen ware to the pots and pans but you really should use wood or sturdy plastic to stir your stainless steel pots and pans..
You still cook "5minute" and instant grits for at least 15-30 minutes on a Low heat. Sample them, and if you are satisfied with the texture, cut the heat off and let them sit for at least 5-10 minutes or you can eat them immediately.
