I really like when this plays as John leaves Geddes ranch. It's uplifting because he's back into the world, trying to make a better life but as we know from the events of Red Dead 1 his efforts to find peace are futile. Fuck this game is beauitiful.
*Spoilers* (For Red Dead Redemption 1) You know what would be sad? having John have the Bad Ending ver. of May I Stand Unshaken? song when he finally meets his end to the pinkerton detective agency, I know he wasn't bad but the tone of the song sounds right for him, ya know?
I had to put down Rachel with the gun I used for the whole time of being Arthur (my golden Lancaster) after the song because the song made me space out and she hit a tree big time.

when i was going for the last arthurs ride i accidentally crushed into a tree and the song stopped playing and the whole thing wasnt so dramatic
