  • Dripping in sauce and covered in cheese, veal parmigiana is not only a staple of Italian-American cooking, but one of the world's great comfort foods. At Emilio's Ballato-a last vestige of Manhattan's old-school Italian eaters-the veal parm is a dish made to appease the New York appetite: breaded, pan fried, and coated in a heavy blanketing of melted buffalo mozzarella. Each night, the restaurant's executive chef, Anthony Vitolo, prepares the plate-sized cut of meat as if he's cooking for his extended family. And though Emilio's Ballato is often slapped lovingly with the label of "red sauce joint," the trattoria excels well beyond the basics of marinara and meatballs. Still, as restaurants around the city continue to embrace the high-end and haute, the veal parmigiana at Emilio's Ballato is a must-try for Italian food-lovers the world over.

    Absolutely stunning. I've cooked professionally for many years and focused most of my cooking around Italian food but I'm ashamed to say that I have never thought about using a beautiful piece of veal chop for my veal parm. This is a delicious and unique twist on a classic Italian dish.

      I lived in Italy for 8 years and I've cooked in some of the best restaurants in Calabria, Milan, Naples and Roma. Typically Veal Parmigiana, Veal lemone, Veal Masala, Veal Picatta a la lemone is done using thinned out veal cutlets. A bone in breaded veal chop is not a traditional approach to these classic dishes.

      I stopped for a while, too, but I did mange (at long last) to find a local purveyor who does free-range. Yes, the veal isn't as tender but that's what marinating in cream helps with. :)

      Ahhh! I see!
      No fears; I stopped because of the inhumane treatment of box-trapped cattle. For me, I've made peace with the death of the animal, regardless of age, and focus mostly on making sure that its life is humane and, in the end, so is its slaughter.
      I know how that sounds; my apologies ... I do respect your position!

    What is it about Italian tomatoes that make them so much better, I've heard so many Italian restaurants talk about how they import the tomatoes from the Old World but isn't the tomato a New World food?

    Veal parm and chicken parm actually exists in Italy.
    It’s called “Carne alla pizzaiola”, wich basically means meat with pizza toppings.

    I tell you: if they import tomatoes, it surely will have to issue a prior notice to FDA prior to depart origin country, otherwise it doesn’t clear customs in the US.

    If this was chicken, I'd order it. I'm American, my parents were Italian, I've never had veal parmigiana. Once, at an Italian restaurant, I ordered a veal dish. The veal was coated in egg and bread crumb. I apologized and sent it back. Veal is such delicate flavor, and not cheap, that I just can't see eggs and bread crumbs hiding the flavor. But hey, that's just me.

    This makes me miss the old tavern on the lawn. Located on the cross Island Expressway. Giant bone in veal chop hand breaded and hand dipped fried on a bed of arugula giant cubes or mozzarella and tomatoes.

      some data again:
      Milanese can be made with any type of meat, it is breaded, fried, and with some spices. Unlike veal Parmesan, it is marinated with spices, garlic, parsley, etc.

    Btw: the 16oz are clearly including the bone which makes it a regular portion and "the alcohol brakes down the meat" is complete BS, especially in this case ;)

    Man that thing is drowning in sauce, if your going to have that much sauce you need to rest the veal on a bed of pasta, if your just serving the veal you news only about 3\4 of that sauce
