Is it just me (hard to find?), but all the challah videos from Geller are on braiding the dough and making the dough, but never on the finished product: after it's baked, and pulled open to see structure/texture.

How do you make a

instead of egg washing is it possible to use something else? like Olive oil?

You won't get the same gloss, but oil will do a little, water will make it crunchier or just skip the glaze.
