That is up to you. When doing books it may be most helpful to use facing pages. That way you have an inside and outside margin. Also, some features can be set in relation to the spine, which only applies to facing pages. -EG
How do you keep the margins correct, when turning off facing pages, when designing a book? To retain the inside margin. Like when designing a book with facing pages, then turning it off to place the bleeds correctly. I've done this before, but I can't remember how it was done anymore...
i have a question please, i'm still confused what is the difference when i print it when both the document size is A4 ? is it only for viewing on inDesign? but if u print it the result will be the same? or if facing pages is on then in order to print it we should use the double size A4 page to print 2 pages at once?
I want to have a finished children's book 8.5 x 8.5, for KDP publishing. Do I make my page size bigger for the bleed they will be cutting off, or does the bleed add the extra width/height?
Make your doc the final size, set the bleed amount they require. When you output, check the box to use the document bleed amount from the Marks and Bleeds section.

Did you have them as single pages first? And did you change them in the Document setup dialog box? If so, they should change to facing pages. -EG
