Making the classic cocktail the "Lions Tail"

    Ingredients
    2 oz bourbon
    .75 oz Allspice Dram
    .5 oz fresh lime juice
    .5 oz Demerara syrup
    2 dash Angostura bitters
    Optional egg white
    Lime peel for garnish
    Directions
    Combine the ingredients in a cocktail shaker, add ice then shake about 15-20 seconds until chilled. Strain over fresh ice in an old-fashioned glass. Garnish with the twist.
    Allspice Dram
    Ingredients
    5 oz. overproof 151 rum
    2 whole cloves
    1/8 cup allspice berries, crushed
    .75 cup water
    1″ piece of cinnamon stick
    1 oz. Dark Rum
    1/2 cup brown sugar
    Directions
    Lightly toast Allspice berries in frying pan, Once cooled, roughly crush berries. Add crushed berries, broken up cinnamon stick, cloves and overproof rum in an airtight container and seal. Shake container to mix ingredients. Store in a cool dry place for two weeks, shaking daily. After mixture has been infusing make simple syrup. Make a simple syrup by combining the brown sugar and water in a medium saucepan over medium high heat. Whisk to dissolve the sugar, bring to just under a boil and reduce the heat to low. Simmer for 10 minutes and then let cool to room temp. Once syrup has cooled, strain solids from infusion mixture by filtering through cheese cloth. Combine Syrup, Infusion and Dark Rum into an airtight container, seal and set aside for an additional two weeks. If solids are present in bottom of container at the end of the aging process, filter as you fill bottles.
