Nice video. But you can see that it's definitely not happening in Germany: Serving something with Sauerkraut and French Fries at the same time immediately disqualifies for any authentic food claims. Nobody with common sense will do that in Germany.

Its Shweinschaxe. Look up other videos. It can be slow roasted first or boiled first. Then it is crisped up under high heat in an oven usually, with pan dripping in a veggie/herb/beer pan (hocks or knuckles sitting up out of it or above it.). Make gravy from the liquid. Yum. The meat is falling spart tender & the skin is bubbled up crispy. Bavaria's contribution to world cuisine, imo.

The flag on the far right background when the man is putting knuckles on the spit sure looks German to me. The other flags seem black & white checkered - like a automotive race winner's flag. We have Octoberfest here in my city, but the German flag does not fly prominently. There are little decorative flags, but the big one, top mast, is American.
