    ▶Tamanho do molde: 15 cm x 7 cm
    ▶Materiais
    2 ovos (cerca de 100g)
    50g de açúcar
    2g de extrato de baunilha
    15g de manteiga sem sal
    20g de leite
    50g de farinha macia
    7g de cacau em pó
    350g de leite
    Folhas de chá Earl Grey 5g
    3 gemas
    60g de açúcar
    Pasta de baunilha 4g
    Amido de milho 20g
    2g de gelatina.
    250g de requeijão
    30g de açúcar
    3g de pasta de fava de baunilha
    230g de creme de leite
    100 g de chocolate amargo derretido
    5g de gelatina
    180g de natas batidas
    150g de creme de leite
    80g de chantilly quente
    Folhas de chá Earl Grey 5g
    150g de chocolate branco de cobertura
    60g de leite condensado
    2g de chocolate amargo de cobertura
    6g de gelatina
    corante alimentício branco.
    ▶Receita
    1. Coloque uma tigela de ovos em uma panela com água quente, adicione o açúcar e o extrato de baunilha, misture e aumente a temperatura para cerca de 40 graus.
    2. Retire a tigela da panela e derreta a tigela com manteiga sem sal e leite.
    3. Bata a mistura de ovos até formar uma espuma fina e rica, peneire a farinha macia e o cacau em pó e misture, depois adicione um pouco da massa à mistura de manteiga sem sal derretida e misture.
    4. Adicione a mistura à massa principal, misture, despeje a massa em uma forma de 15 cm, asse em forno pré-aquecido a 170 graus por 20 minutos, retire da forma e deixe esfriar.
    5. Corte a parte superior e inferior da folha resfriada, depois corte em 2 pedaços e corte em pedaços de 12 cm.
    6. Adicione as folhas de chá Earl Grey ao leite, ferva por cerca de 5 minutos em fogo baixo e coe por uma peneira.
    7. Adicione o açúcar e a pasta de fava de baunilha à gema de ovo e misture, depois adicione o amido de milho e misture, despeje o leite Earl Grey gradualmente e misture.
    8. Leve ao fogo baixo e mexa até engrossar, retire do fogo, acrescente a gelatina embebida em água fria por cerca de 10 minutos e misture.
    9. Transfira para outra tigela e cubra com filme plástico para esfriar à temperatura ambiente.
    10. Adicione o açúcar ao cream cheese e solte delicadamente, adicione a pasta de baunilha e o creme de leite e misture, em seguida, adicione o chocolate amargo derretido e misture.
    11. Mergulhe em água fria por cerca de 10 minutos, escorra e leve ao (micro-ondas) por 10 segundos, adicione a gelatina derretida, misture e misture com chantilly diluído a 50%.
    12. Coloque a forma de mousse em uma forma de 12 cm, coloque 1 folha, despeje a massa de cheesecake de chocolate e alise-a, coloque outra folha por cima, esprema o creme de leite (150g), alise e endureça no freezer por 1 hora.
    13. Coloque a massa endurecida em uma forma de 12 cm em uma forma de 15 cm, retire a forma de mousse e a tira de mousse, despeje toda a massa de cheesecake de chocolate restante, alise-a e deixe endurecer no freezer por 3 horas.
    14. Coloque as folhas de chá Earl Grey em chantilly quente e deixe ferver.
    15. Coloque uma tigela de chocolate branco de cobertura em uma panela com água quente a cerca de 80 graus, passe o chantilly Earl Grey por uma peneira, acrescente o leite condensado, o chocolate amargo de cobertura e um pouco de corante branco e misture.
    16. Retire a tigela, adicione a gelatina embebida, misture, peneire, esfrie a temperatura para cerca de 35 graus, retire o bolo endurecido da forma e despeje a calda.

    I've been thinking about making an entremet with Earl Grey! I feel like the custard and mousse might've been too firmly set here, though, so I may try it without the gelatin in those components.

      I did not add gelatin to custard added to the mousse. The mousse won’t be hard. Custard may need the gelatin too cuz after freezing 1 hr, it was still too soft.

      It is used to keep the cover soft and stay in place, with gelatin it's easiest.
      You can make this without gelatin and use any substitute, just look up the measurements of the substitute and try out to find the result of wanted thickness and softness. It's kitchen chemistry! 😊
