I personally use the Barron's GRE book but in general books are the same - I would just pick whichever ones are available to you and make sure you go through it completely
The truth is that I spent 2 weeks studying for the GRE and got 170 in math. Those aren't lies, and the vast majority of people also have "a ton of prior knowledge" seeing as they go to school for 12 years + 4 years of college before taking the GRE. I didn't major in engineering or math either, so I think it's fair. Try to not say "I can't do this because she knew everything beforehand" and try to say "What can I learn from her to get as much as I can from her experience, even if we're different people?" instead.
This really depended on the day. I was in a relatively unique situation because I only had 2 weeks to study and was not working at the time. I probably spent 8-10 hours a day. If you have a job, have a longer timeframe, etc. you should not be spending that much time a day and should spread out your studying instead.

I would stick to official materials from the ETS website for that short a timeline
