Call me a purist but I don't like to see people hacking away at a health plant to artificially "make a look". If it occurred naturally, great otherwise its cosmetic surgery for a tree.
Bonsai has been done in many ways for centuries... but I'm with you. I prefer the look and feel of a bonsai that's been "influenced" to grow in a particular way... not forced by sheer will, for the sake of "art".
The part worked by Andrés is dead before start. He only works improving the texture of existing dead Wood. And the final result is more natural than before start the work. It looks more natural and older in my opinion. Also he remove Wood in bad state and leave there only Wood in good state, so it's good for the tree and the future maintenance of the dead Wood.

The live vein is on the other side of the trunk, and this woodwork was done on the already dead section of the trunk!

I agree, it looks like it hurts the tree!!!! Ouch!!!
This is no different than putting wire on a tree or pruning it. The moment man interferes, it's bonsai.
