Chocolate Lava Cake by BM In a blender place the following items & blend: ~ 1 1/2 cups of frozen cauliflower (defrosted to blend more easily - she used a microwave) 1 cup oats 1 very ripe banana ~ 1 tbsp each of chocolate powder & PB powder 1 tsp vanilla baking powder (looked like 1 tsp) 1 cup water or plant milk 1 tbsp chia seeds (acts like a chia egg) optional add-ins: dates or maple syrup (or something like stevia) if you want it sweeter, silken tofu or chickpeas (she would normally add but she was out of both) Pour it into a bowl and garnish with blueberries. She placed the bowl in the microwave to bake it, "for a few minutes if you want it on the softer side or up to 6-8 minutes if you want it more cakey."

Typical Lunch by BM Base: a large chopped potato, broccoli florets, & sliced cabbage (red or green) Place these veggies into a large pan with a splash of water. Add some frozen garlic cubes & salt for seasoning. Put a lid on the pan & cook until the potatoes are soft about 10 minutes. (Then remove the lid to evaporate the excess water & make sure the potatoes are cooked thoroughly.) Use about 1/3 of a block of tofu & chop it small to look like "tiny baby croutons". Sprinkle bouillon powder on the tofu cubes & she usually uses nutritional yeast but she's out of it. Pop it in the air fryer. On the other side of her air fryer, she placed the seitan & cooked them together for ~ 5-10 minutes (depending on temp). In a bowl place some leafy greens. Top the greens with oil-free hummus (can be thinned out with lemon juice) & stir it in (this is the dressing). Add the cooked veggies to the leafy greens. Then add the tofu & seitan, then top the bowl with cherry tomatoes, chopped pickles & sauerkraut. Add some more hummus & Everything but the Bagel seasoning.
THAT’S the feeling that keeps you running. I love that feeling, but I don’t get it all the time. Love that you’re experiencing it, especially while training for a half. Best wishes.

The breakfast cake looks amazing but I won’t microwave my food….why destroy the vitamins and expose yourself to more “waves” of any kind with all we have to deal with daily….I’ll bake it in the convection oven….
