One comment (to help those in 'the abroad'), please specify what type of cocoyam you use. There are mainly 2 types found in NA - eddoes and taro. Eddoes are smaller and Taro s are larger. It is possible that what is used for achu is the 'eddoes' and what is used for 'ekwang' is the 'taro' (based on other videos I've seen). I could be wrong, so please correct me!

Use the stand mixer section of your grinder to mix the Achu. It will come out perfect. Less stress
