      He doesn't know her. That's the great irony of the film; all his self-aggrandizement for his tracking skills doesn't pay off with her, and his inability to ID her gets the whole Nazi High Command killed.

    His talent has no limits, this guy can switch between three or four languages with an excellent accent in a few seconds, who can do such a thing while acting perfectly lmao ?? Waltz is one of the greatest actors alive

    when she cries at the end, it shows how intense and terrifying Landa is, she could barely hide her real feelings during the whole interrogation, the same as the French man in the beginning scene

      For a man with such a small stature, you're right, he was absolutely terrifying in this movie. You never know what he's thinking, but you do know that he is devilishly smart and the weight of the SS behind him.. terrifying character without having to be physically menacing or yelling and screaming. Waltz is an amazing actor.

    This is my favorite scene as well. Landa and Laurent are acting so incredible good. Indeed, you can feel the tense screaming out of the screen.

    I don't think Landa knows it's her. That's just Tarantino's brilliance who is showing this scene from her perspective and he has successfully communicated and transferred her doubts on to the audience

      I'd like to disagree, but Tarantino was clever enough to show on this scene that Landa was highly suspicious about "Mademoiselle Mimieux's' identity.

      Nah, he knew. He never was uninformed. He constantly was obtaining more and more information, no matter what it was. He was absurdly intelligent, but was very arrogant and ended up being his downfall.

      it also has something to do with jewish rules.

    The point of this scene is that HE DOESN'T KNOW how could he he never saw her face? The point is that we the audience start to overestimate him and fear him the way Shoshana does. And in the end we also overestimate him when he willingly gives himself up to Aldo. The movie does such a good job of presenting him as this genius almost supernatural detective that the audience starts to think he's invincible.

      thank you, finally someone pointed it out. Landa did NOT know who she is, otherwise the whole massacre would not happen. The milk, the forgotten question, the way he talks is just a coincidence to give the viewer (and Soshana) the doubt.

      Perhaps it serves as a jab at the restaurant itself, something for them to find later- turns out the strudel wasn't as grand as he purported after all, at the end he let everyone including the chef know. Realistic gesture of someone like Landa in that way!

    This scene is testament that to have intense fear and emotions you dont need screaming actors or dramatic situations. Here we have two people having a polite conversation over strudel and milk. But in the cinema, this was one of the most intense moments ever, and when she sighs at the end the entire audience sighed with her.

    A lot of people noting he must know because he ordered her milk, but it gets worst than that. He made her wait to eat until they had cream which used to be made with lard aka pig, and is not allowed as a kosher food in Jewish culture.

      Actually the strudel was the real trick on that, there wasn’t an specific oil to made that kind of bread, idk if landa knew she was shoshanna or however it’s written since the beginning, but he suspected about her identity, and the way she act and eat made it very suspicious for Landa, after all he’s the Jew hunter

    Really bugs me how the waiter gives them a tea spoonful of cream each then leaves with the rest on the platter. Then again my guessing is he probably wanted to get away from the colonel as quickly as possible. I would have asked him to leave the plate though.

    Her ability to show that kind of emotional response is extraordinary. She’s truly beyond gifted. An amazing display. Bravo!

      Is it JUST like this one here? If so, I've GOT TO - no - I MUST try it - I presume it's homemade(such as this, in this scene) - with LOTS of cream!...but unfortunately, the only apple strudel that I can get (that I so far, know of), are the miniature ones that come in clear, plastic containers from H-E-B...they're okay...not that tasty, but not bland, either...

      He knew and he respected the fact that she didn't 'break the masquerade'(he kept probing her story even though he knew exactly who she was to see if she'd slip) which is why he doesn't just kill her like he did the German actress who was in a similar situation but broke the masquerade.

    One thing that's usually unnoticed is that they focus only on Shoshanna when Landa arrives and Zoller starts a conversation with him. IMO, that takes away all the control from Zoller and puts it on her. He has been sort of protective towards her, and she feels that too, but not anymore after Landa arrives and hence she's alone now, as seen in the camera work.

    I like to think that the german cigarette being put out in the strudel is a symbolic reminder of the carnage ( the strudel filling) that was done below the house floor

    Everything annoyed Soshana here. The sound of Landa chewing the strudel, the sound of the fork on the plate… but I must say about the little piece of apple that Landa grabbed… it’s so natural, so real.
    Way to go, mr Tarantino. A masterpiece.

    The acting in this scene is simply off the charts. Being French herself, I actually believe Ms. Laurent didn't have to act much for that last gasp at the end of the scene with the Oscar winning performance of Mr. Waltz. Simply terrifying.

    There is, in this scene, a joke that as more effect on french people. Through the movie, Landa tries to use familiar expressions, but do mistakes (e.g. "that's a bingo").
    Here he says "pas si mauvais" (not so terrible). In french, the correct expression is "pas mauvais" ( "not bad". It's called a litote or understatment, which we use to say "that's pretty good").
    Fun fact, the strudel here is clearly made of "pate feuilleté levé", which is a type of dough we use for the croissant (and we are quite good at it). I went to germany and tried the strudel, the dough was awful and I was quite disapointed (althought, the strudel is an Austrian specialty, not German). So unless Austrian actually do it better, I think the strudel in this movie is totally how the french would have done it if they had to, which makes sense in this scene.

      Then there are Landa's hints on that he knows who Shoshanna is.
      He ordered milk for her (her family was shot on the milk farm).
      He ordered strudel with cream. Since this is wartime, it is likely that strudel was made with rendered fat instead of butter. Consumption of fat with milk or cream is not kosher (i.e. it's a taboo she had to break to not give herself out). Landa likely noticed, that she is not going to drink milk with strudel and order cream separately (and insisted that they have to wait for cream).
      And then he offered her a cigarette, pointing out that it was german.

      I have some doubts about the milk part, may also be interpreted as him unconsciously always following the same pattern for interrogation. He's falsely nice behavior, pride, and smoking was also in the first scene.
      I also had the kosher idea about the cream.But I don't believe in it : It only works on your assumption that they are not using butter, which you would agree, is far from obvious. Besides, it take place in a super fancy restaurant were the minister himself is dining. I don't believe for such guests they wouldn't find the best stuff...
      Also, if you find cream, no way you can't find butter, since it's produced together

      This is just a theory (and not mine, btw, I'm simple repeating what I've read elsewhere), but this might be part of Landa's plan to change sides.
      First of all, this is last stages of war, German brass (including Landa) already know that they are going to lose, they just don't admit it.
      Bridget von Hammersmark somehow managed to learn enough and early enough to plan out operation 'Kino'. With Allied forces already being in France (as final scene from the movie suggests), gathering together most of German commanding officers AND both Goebbels and Hitler in one place is very dangerous. Landa, being chief of security, would know where these VIP went, but I doubt that an actress (even famous one could). Landa also knew that The Bastards are somewhere close, so they are likely going to act somehow.
      So, here is the rough draft of Landa's plan:
      1) leak information about German brass gathering to someone with connections to Allies.
      2) capture The Bastards (or whatever saboteurs Allies would sent)
      3) use them to contact Allies to get into negotiations we see, when Landa captured Aldo and Utivich.
      Now, he might have not recognised Shoshanna, but his... let's call that teasing is too specific for her. I think he saw her theater as a better opportunity: she hates germans, so she might do another terror act on her own. Even if Aldo's men get captured while Landa is away, he will have a backup. And since his offering of letting Allies kill all of german military command at once is too tempting to pass, they won't say no to his (somewhat) humble demands of pardon, medal, citizenship and property in USA.

      I'm Austrian and I can assure you that the original Austrian specialties you will only get it here in Austria. Same goes for Schnitzel, Kaiserschmarrn, Sachertorte, Tafelspitz etc. Nobody does them like us. If you ever visit Vienna and want to get the best Strudel in your life then go to a traditional confectionery like Demel or any traditional Kaffeehaus and you'll be thrilled by the quality and taste.
