    Char Siu has that distinct unami flavor, and that comes from fermented red bean curd, natural red from the fermented bean curd also gives it a vibrant color. Maltose+sauce is used for basting to give it that chard caramelized shiny look. Char Siu without red fermented bean curd is just another bbq pork.

      Yeah it just tastes like 5 spice without it. Red bean is definitely the game changer.

    Char Siu was my fav when little my dad use to buy it every other weekend from a little Chinese kiosk inside Calfed in Gardena, CA - 1980s' lol but today I make it myself from pork belly and pork butt because pork butt is jucier.

    Highly recommend you try adding a processed beet root for even better coloring, and also make them with bellies.

    Pop the maltose in the microwave for a bit before you have to work with it. It'll flow better, and not stick nearly as much.

      ​@@ronnie3007 simply a better alternative to red food coloring. Red dye had proven to cause cancer. You can also use red bean curd and Breet juice

      Honey is the substitute for Maltese, so you can just omit it and double your honey
