Vietnamese Grilled Lemongrass Chicken Skewers Recipe - Marinated BBQ Chicken Skewers

  • Grilled lemongrass chicken is not only delicious, it’s really easy to make! I use chicken thighs for this recipe because they’re juicier than breast meat. Today I’m using about 3 pounds of thighs. The marinade is made with only a few ingredients. We’ll need one stalk of lemongrass finely chopped. I use the whole stalk but chop the ends off. Next chop 3 cloves of garlic. Next we’ll need about a quarter of a small onion finely chopped. Put all the chopped ingredients in a bowl and add 1 tablespoon of fish sauce. Next add 2 tablespoons of soy sauce. And finally add 2 tablespoons of sugar. Stir this mixture around to dissolve the sugar.
    With the chicken, slice it into roughly one inch pieces. This will give the meat plenty of surface area to get brown and caramelized. I usually like to use a decent amount of meat because these skewers usually go fast because they’re so good! Place all the meat into a large casserole pan or dish and cover with the marinade. Stir it around so that it’s all covered with the mixture. We want to make sure there’s a blast of flavor in every bite!
    Cover the dish and place in the fridge for about 2 to 3 hours to marinate. The longer the better! When you’re ready to grill, take bamboo skewers and thread the meat onto them but leave room for a handle on the end if you like. The final step is to take these to a hot grill and place them side by side. About every 5 minutes or so, turn the skewers so they get a nice charring on all sides. When these skewers are done they smell so good I can’t wait to bite into them! You and your guests are gonna love these! It’s so easy to make that they’re part of my regular dinner rotation these days!
