This is so awesome. You are so creative and amazing. May i ask what do you do to keep your chocolate in the bag melted so it doesn’t go hard in between applications.
Having quality chocolate like callebaut helps because of the cocoa butter but otherwise if you give just 3-5 second bursts in the microwave whenever the chocolate at the tip of the bag firms up, that usually does the trick 😉
Hi Jessica, I use Callebaut chocolate callets as well as compound chocolate. For the moulds you might find it easier just to use compounds such as merckens if you don't want to temper the chocolate.

Hey Kelsi welcome! 🙂 Piping details in the mold will generally give you a cleaner, smoother and glossier finish. Of course its a matter of preference and it depends on the finish required but you will find most chocolatiers decorate inside the mold 😉
