    I had 3 gallons of Sun Gold/Sun sugar cherry tomatoes in my freezer from late last Fall, and I remembered this video, so I pulled out a bag today, and followed your recipe. It’s literally the best thing that I’ve eaten in months! It’s been a long Winter..lol Thank you!! 👍🙏🏼🍝

    recipes like this make me proud! they’re so pretty, complex, deep, yet simple! i will literally be able to make this as a broke college student in manhattan using my toaster oven to roast the tomatoes and some simple pasta!

Really well done, with so much respect for the meal itself and intelligence, using local and seasonal ingredients when available... you are not simply making italian food, you are teaching our way of looking at food.     Ok, I live on a homestead. We have fresh Basil, tomato’s, and eggs. This coming spring / summer, I’m making this with as much fresh from the yard ingredients I possibly can. My chickens will help me with the pasta even. I’m SO STOKED to try this with home fresh ingredients! Thank you!!

      ​@@danielgrilli4739 Fair enough. But as I just watched Babish's new Carbonara video it came to me: while Stephen is the most underrated, Babish is the most overrated cook on youtube. And its all of us who are to blame because we enjoyed watching Babish cooking shitty yet entertaining recipes that we'd never try ourselves. On the other hand: EVERY. SINGLE. RECIPE of Stephen is pure gold, ready for you to try and learn. So no, both can not reside together. Babish reproduces what's wrong with American cooking. Stephen transcends his Americanness into something that both Italian cuisine-fascists AND amateur-cooks can get behind.

    Why not roast the tomatoes and such in the pan (oven safe) then deglaze with a nice wine to get all those brown bits included with the sauce!
    Regardless, this recipe is simple, quick and has lots of ways to mix it up to match your taste👌
    I don't usually comment but I gotta say, you're one of the best cooking channels on UA-cam. Keep it up brother 🙏 love from Niagara Falls Canada

    I’ve made this a bunch of times and it is absolutely my favorite tomato sauce. When I roast the ingredients I also add a chunk of Parmesan rind to the baking dish. Bonus: you can eat the warm rind afterwards and it’s fantastic. Also I’ve tried it both as a chunky sauce and as a smooth sauce and I prefer the smooth. So after squeezing the garlic back in and removing the basil and Parm rind I use an immersion blender to purée. Just perfect.

    Looks amazing. I pretty much do the exact same dish but I saute the tomatoes until they burst. I then top the dish with fresh burrata--amazing summer pasta.

    My cousin roomed with me while he did an internship in my town last fall. He made this recipe one night and I was blown away. I asked him to make something to help use up some of the cherry tomatoes harvested from my garden. It is hands down the best fresh tomato pasta I've ever had in my life. I made it tonight and added a sauteed onion, spinach, and shrimp, a couple shakes of parsley & oregano. I couldn't stop eating!

    Cherry tomatoes are actually perfectly fine all year! Unlike plum- as well as most other tomatoes, cherry tomatoes are allowed to ripen on the vine before they're plucked so their get to develop more flavor than other farmed tomatoes. Of course, I'm sure that summer, in-season tomatoes will be more delicious than the ones you buy in supermarkets during the winter, but they're great all year around for easy, fast sauces due their sweetness, size and high concentration of pectin.

    I love the tip on how to get more basil out of your plant!
    It’s so expensive buying fresh herbs in the store, but I only occasionally buy a basil plant because they can be a pain to upkeep and I’ve never noticed them growing more once I have them.

    Had some plum tomatoes that were hanging out in my pantry for a bit too long and decided to try using this recipe with them and some penne, oh my god this was some of the best pasta I've ever made in my life. The umami depth of the roasted tomato and garlic is just incredible, increased even more with the grana cheese, but it's perfectly balanced with the fresh tomato acidity. I think this may be one of the best recipes you have on your channel, no joke

    I added carrot and onion to the mix while roasting the bad boys. blended everything, roasted some guanciale in a pan, added the blended stuff and mixed in with the pasta and pasta water... it was just divine. Thanks for this and pretty much everything else on your channel... just delicious stuff.

    So glad this recipe popped up on my feed! This has become my favorite way to use the bumper crop of cherry tomatoes that I tend to have this time of year! I use an immersion blender on it and then freeze it in small batches for a quick yummy mostly fresh pasta sauce during the winter months.. Delicious!

    I have some Sun Sugar, cherry tomato plants in my garden, and I don’t even plant the red or yellow cherry tomatoes anymore, because the orange ones are just the best, like you said! :) Thanks for the recipe! I’m excited to make it tomorrow..:))

    Sauce turned out fantastic, has a real creamy texture to it. I also mixed in some fried anchovies n shallots at the end and they worked well with the sauce. Your videos are no joke man, one of my fave cooking channels, thanks for your recipes.

    I’ve been growing tomatoes this summer and I’m overwhelmed with the amount that the cherry tomatoes are producing. So looking for recipes for them. The only thing I would change in this process would be after roasting them, I would blend it and then add it to a pan to break down the skins of the tomatoes. I’ll be putting this to use soon. Thanks for sharing

    This is really fantastic! A nice change from regular spaghetti sauce or Sunday gravy... which I make well. Made it two weeks ago and now back for another round. Its one of the few pasta's that I don't require meatballs because its so hearty. A++ AND, deveus1 is right. There is no such thing as to much garlic :)

    Just a note on Pyrex, make sure the stuff you buy is borosilicate glass. Some examples of Pyrex (depending where you live) will have a similar logo, but will be cheaper, inferior materials.
    Borosilicate glass is the one that's ridiculously heat proof, and the stuff that got Pyrex it's good name.
