Hello Everyone, In Today's video #ChefAnoshh will be showing you how to make a delicious mildly spiced paneer peshawari. A Vegetarian Royal treat.
Inspired by a very renowned dish ‘Chicken Peshawari’. The Creamy, Rich and Mildly spiced Cottage Cheese spiced in onion & tomato gravy with balanced spices gives you a delicious and smooth blend of flavours. A very simple and easy to go recipe. Enjoy your serve with Tandoori Roti/ Paratha.

Ingredients:
Seasoning of Paneer:
500g Cottage Cheese (Paneer), cut into bite sized
3 tbsp vegetable oil
1/3 tsp turmeric powder
1/3 tsp Kashmiri Chilli Powder
Salt to taste
For the Gravy:
2 tbsp Vegetable oil
2 dried Bay leaves
1 tbsp Cumin seeds
1 ½ cup onions sliced
1 green chilli, chopped
1 tbsp Ginger & Garlic Paste
2 cups tomatoes, roughly chopped
1 tbsp Red Chili powder
1 tsp Coriander powder
1 tsp turmeric powder
1 tsp Garam masala powder
½ tsp Kasuri methi (Dried Fenugreek leaves)
1/3 rd Cup fresh cream
Salt to taste
8 Cashews
150-200 ml Water
For Garnish:
Freshly chopped coriander
Fresh Cream
Method:
Step1:
In a bowl, Mix Paneer, Kashmiri chili powder, turmeric powder, salt and oil. Gently coat the paneer cubes with the mixture evenly. Heat oil in a pan. Saute the paneer cubes until nicely incorporated with the spices. Transfer the paneer into the bowl. Cover and keep aside.
Step 2:
In the same pan. Heat oil. Add dried bay leaves, cumin seeds. Cook on low medium heat until the cumin seeds start to sizzle. Add onions medium sliced. Saute and cook until translucent. Add green chili. Add ginger and garlic paste. Cook on medium heat for 5mins. Add roughly chopped tomatoes. Cook on high heat for 7-10 minutes. Until the tomatoes are nicely cooked. Add red chili powder, turmeric powder, cumin powder, coriander powder, garam masala and salt to taste. Cook the spices well. Add cashews. Add water. Bring the mixture to a gentle simmer. Remove bay leaves. Leave the mixture aside to cool.
Step 3:
Grind the mixture into a fine paste. Add butter in a pan. Add the mixture. Cook on high heat for 5 mins. Combine the spiced paneer with the gravy. Mix well. Add dried fenugreek leaves. Cook for 5 mins. Add fresh cream. Cook the gravy for 7 minutes on medium heat. Garnish with freshly chopped coriander and fresh cream. Enjoy with the royalty with Tandoori roti/ Paratha.
