    *Fried Fish with Lemongrass and Chili: A Rustic Recipe*
    *Ingredients:*
    1 whole fish (tilapia, catfish, or red tilapia)
    3-4 stalks of lemongrass
    2-3 red chilies (to taste)
    2-3 cloves of garlic
    1 shallot
    1 tablespoon fish sauce
    1 teaspoon sugar
    1 teaspoon salt
    Cooking oil
    *Instructions:*
    1. *Prepare the Fish:*
    Clean the fish, scale it, remove the guts and gills. Make shallow cuts on each side of the fish to help it absorb the seasoning and become crispier.
    Season the fish with a little salt and let it sit for about 15-20 minutes.
    2. *Prepare the Seasoning:*
    Clean and finely chop the lemongrass.
    Finely chop the chilies, garlic, and shallot.
    3. *Fry the Fish:*
    Heat cooking oil in a pan. When the oil is hot, add the fish and fry over medium heat.
    Fry each side of the fish for about 5-7 minutes, until golden and crispy. If desired, you can sprinkle some of the lemongrass and chili mixture over the fish while frying to enhance the flavor.
    4. *Finish:*
    Once the fish is golden and cooked through, remove it from the pan.
    Serve the fish on a plate, and you can garnish with the remaining finely chopped lemongrass and chili for added flavor.
