- Last week we made Tuscan Chicken for the freezer. And this week we have taken it out of the freezer and thawed it and we are cooking it for dinner and serving it with a salad. It’s a delicious, healthy meal!
Fabulous Friday Freezer Meal - Chicken Tuscany
4 - 6 boneless skinless chick breasts
1/8 cup white balsamic vinegar
1/8 cup olive oil
1 T Dijon mustard
1/4 tsp onion powder
1/2 tsp black pepper
1//2 tsp dill seasoning
1/2 tsp basil
1 T capers
1/2 cup shredded mozzarella
In gallon bag with chicken breasts add white balsamic vinegar, olive oil, Dijon mustard, Onion powder, black pepper, dill, basil and capers. Seal bag getting out as much air as possible and move chicken around to get the marinade over all pieces.
In a quart size bag, add mozzarella and seal getting out as much air as possible.
In a small bag, add your recipe with cooking information.
In a second gallon size bag, write the name of the freezer meal and the date you are making the meal. Then put all three bags, chicken, cheese and recipe into the second gallon size bag. Seal getting out as much air as possible. It's ready to freeze.
On cooking day, thaw in refrigerator. Remove chicken from bag, discarding marinade. Grill chicken over medium heat turning once and cooking until temperature reaches 165. Or bake at 375 for 25 minutes. Top each chicken breast with mozzarella cheese and broil until cheese is melted.
Suggested sides: Steamed zucchini and pasta salad.
