How to Braise Pork

  • Braising pork sounds like a challenging way to cook a larger cut of pork; however, all it takes is a few minutes of active cooking (searing the pork) and then letting it cook in a large pot-preferably a Dutch oven-for a few hours with some flavorful braising liquid, herbs, and vegetables.
    Follow Chef Yankel's guide to this method to get extremely tender and fall-apart delicious pork perfect sliced up as a main dish or broken up for pulled pork or pork tacos.

    I made this tonight. Delicious! In haste, I made the error of using ACV instead of Apple Cider. It still turned out... melt in your mouth tender. Went the full 2 hours to achieve this tenderness. Omg, it was to die for. I served it with a side of Russian potato salad. Heaven on Earth. Thank you. I can’t wait to make this again!

      I added ACV to the majority apple cider based on this comment and you’re right, the flavor was phenomenal! I guess ovens vary because I went 2hrs, but texture was over cooked. Thanks for the ACV idea, though😉

    I made this. It has really good flavor, but I recommend using 1.5 hrs instead of 2. I cooked for 2 hrs, but it was a little over cooked. I am trying the dry rub method tomorrow 😉.

    So, I tried the dry rub today and... it is GORGEOUS!!!😍😍😍 The flavor is so amazing. Although I absolutely adore coffee, I had my doubts about this unusual ingredient in the dry rub. Put aside your doubts people, this rub is awesome! Also, because of the texture issue I had braise cooking the other half of the pork roast for 2 hrs at 275F, I changed it to 30 minutes at 350F...Perfection. I guess you have to know your oven.

      ButcherBox , he’s a chef. I wouldn’t dare suggest anything to him 😂. I think the way I cooked it worked for me because my stove is ancient 😜

    A bit confused in general by the timings of recipes versus your videos. This video says 1.5 to 2 hrs but printed recipe says 3-3.5 hrs. No reference to the size of the roast, which must make a difference too, no?

    Just curious...what did you do with your juices after the meat was done? Did you reduce it or anything else?

      You can make a "jus" out of it by reducing it and mixing with some flour to thicken it up.

    Does it matter how big or how much the shoulder/butt weighs as far as how long it cooks? say an 8 lb cut? thanks
