  • Dubbed the "Queen of Chicken Rice" by none other than Uncle Roger himself, my recent trip to Singapore was an exhilarating journey of taste and tradition. I took your recommendations to heart and embarked on a culinary adventure across the city-state, from high-end eateries to hidden gems.
    In this brand-new series is dedicated to Singapore's national dish - Hainanese Chicken Rice, where I get to learn more about this iconic dish.
    This episode kicks off with a visit to "Mian Ji Fan Chicken Rice" in Serangoon - I apologise in advance for any mispronunciations, it's not my first language!
    Here, I savoured a delightful (medium) portion of steamed chicken rice priced at $6.50, complete with free soup, a variety of self-service sauces, and achar pickles. This meal was not just delicious but an excellent start to my series.

    20 years ago there were 3 CR vendors in katong near the shopping centre, each one famous for the chicken, the rice and the other the chilli sauce

    Nice! I always go for the rice first and U love it when the rice is aromatic, glistening and has that nice light toasty brown colour. It a sign that they use the chicken stock, garlic, ginger and the oil they fried the garlic and ginger in to cook it😊

    My go-to is Sin Ming Chicken Rice. Rice is ok lah but the chilli, chicken and soup... Damn shiok lor!

    Huge fan of Hainanese chicken rice. Here in Toronto, Canada, we make do with whatever restaurants here can offer. Beggar can't be chooser. 😄
    I prefer the chicken deboned, else I feel like I have to eat around the chicken.

      I know! Thanks for the feedback! It was the first video series where ive been recording/filming solo (usually my husband does this for me) - so i didnt know how to have a dual receiver but i do now!!

    Oh, back in sg? I always eat at boon chiang chicken rice (301 Punggol Central) after I have moved to Punggol. Quite good. Else I'll eat at Victor Famous Fried Chicken Wing Rice and Hainanese Chicken Rice (638 Veerasamy Road), get the fried chicken wings, taste like corona chicken (if u know what it is 😅)

    Something I noticed in Singapore was that the food portions were quite small.... but everything was so delicious that I never felt hungry. That and the huge amount of walking I do there, mean that I always lose quite a bit of weight every time I go there, but never feel hungry or tired!!!

      Generally speaking the food portions in Asia are smaller compared to the food portions in north America especially USA.

    I be interested to see how Liz chicken rice compares 😅
    Apparently my friend came back and tried some of the famous ones and she felt overall tian tian at Maxwell is still her favorite. But they don’t serve the broth

    Chicken rice has 2 major "styles," one uses the chicken broth to cook the rice, and one that does not.
    The feel of the umami can be contrasting. Some are in your face. Wow. I prefer the subtle ones that grow on you, and you can not stop eating.
    Then you have the chili sauce, some more bite, some more refreshing. Some has ginger mixed in. My personal are those separated and has chicken oil and scallions mixed in, more "Cantonese style."
    Comes to chicken, you have the lean chewy ones, using kampong chicken and the tender melts-in-your-mouth fat chicken.
    Then there are those able to have the fats under the skin, like jello, the ultimate.
    Since H1N1 epidermic, it is hard to find chicken that are cooked al dente, pink at the bone and when they chop it, the marrow can be still red.
    Texture of their rice, some are soft and flavourful, while others are individually grains, almost like risotto chewy.
    And you have the innards, liver and gizzard must be cooked to perfection.; sadly no longer are the intestines available.
    There is no "perfect" chicken rice, just one that fit your taste and mood. Almost impossible to have a bespoke chicken rice. 😅😅

    Most often I eat Hainanese chicken rice cooked by my girlfriend's Hainanese mother. If not, we are most likely to go to Katong Mei Wei just because of its uniqueness.

    I am a huge fan of chicken rice. I tried almost every recommended chicken rice in Singapore. BUT , just last year, i accidentally discovered the best chicken rice i ever had in my life. Please try Mun Fu Chicken Rice @ Cheng San Market & Cooked Food Centre. They de-bone EVERYTHING , including the tip of the wings. Please do try and let us know your thoughts on it!
    P.S - Gotta go early. They sell out really fast and the queue is always long.

    Few years back, there was a China guy and a local Chicken Rice Stall. The hawker sold him S$1.80 daily meal set to help him penny wise. Then they paid agency fee $5000 before landed any poorly paid labourer jobs in Sg.

    Please try Hong Feng Chicken Rice at the hawker centre @ Blk 505, Jurong West St 52!! Their white steamed chicken is the best that I've tested so far. Even the breast meat tastes tender and succulent. Their roast chicken is also much more fragrant and tastier than what I've tried before from other stalls. You've gotta review their chicken!! 🤤🤤🤤

    I developed a five-point rating system:
    5. 6:30 one- the absolute minimum that a dish should be. It covers all the bases, but that's it. Eat something, or somewhere, else.
    4. 3:15 one- a bit above ordinary. It ticks all the boxes but there's a little something extra- good wok hei in a CKT, for example. Will probably be the stall's signature dish or the best offering of any dish within a given hawker centre.
    3. Shiok- at least in the top 10 to 15% of places offering this dish.
    2. Damn shiok- one of the top 10 places on the Little Red Dot. You tell your friends about it, but no one else, so you don't spoil it by making the place too popular and degrading the product by serving too many customers.
    1. DDMT- die die must try. Absolutely authentic in every way from ingredients to the method of preparation. You would travel across the island for this dish. Two hours on the MRT, plus costs, for a $10.00 barbeque stingray or $7.00 CKT? Relak lah! Damn worth it.

    As a local here, it's wrong when your mum says Singaporean don't queue for things. Queuing is one of our favourite pass time, not just for good things, possibly for anything.

      No. I'm a locally born Singaporean. I don't believe in queuing for anything unless its absolutely necessary. It doesn't make sense for me to join the crowd.

      @@Neojhun it’s not a thing in Hainan. It got famous in Malaysia and Singapore then Hainan (China) took it back as their own. The closest ‘thing’ was wenchang chicken. Arguable which originated first among most people’s knowledge but Singapore is notorious for taking Malaysian favourites and calling their own :)
