- Today I needed to make some sheets of puff pastry for a restaurant that uses them for beef Wellington. Yesterday I did the laminating, today was just the final sheeting.

That press pays for itself...correct? I’ve seen other videos where ppl beat-the-tar, out of slabs of butter to get it flat! This machine makes the work excellent and not so violent! Lol...ur lamentations r spot on sir...

Thanks Erika! The rolling pin is made of polyethylene. I don't remember the brand name, but it works well and sticks less than many rolling pins.

David, first off thank you for the compliment, I'm glad the videos are calming for you. If you are doing laminating by hand, it's important to take your time and return the dough to the refrigerator between each turn. Using a sheeter like I am in the videos, I can rush the process and complete two or three steps at a time. By hand, it's necessary to slow down and do one turn at-a-time like I do in this video:ua-cam.com/video/oXFYcy4AQVo/v-deo.html
Hi Mark, Nice work, you are very take good care of your puff sheet, impressive. just curious , what do you do with all the off cut cause I have off cut too but mine is a lot bigger because I rolled my hand.
I save the scraps for myself and use it in my own cooking .

What would you usually do to the excess pastry sheets?
The sheets went to a restaurant; I kept the scraps for myself to make some dinner with. 👍🏼

Thanks a lot! It's called a 'reversible sheeter' or 'reversible pastry sheeter' and I would recommend looking for a used one, possibly from a bakery or restaurant near you that has recently closed down.

Can you tell us how you prepare the flour that you use for the pastry dough? How much proportion of which flours you mix?
It is about 75% all purpose flour and 25% cake flour

Yes I have, Michael! In fact one of my favorite places to visit here in Madrid is a Filipino bakery. Just don't ask me the names of the different things that I buy there, because I don't remember ;)
