In today's video I play Minecraft but if my Twitch chat spells and item it gets deleted or the word "plains" all plains biomes get removed, if the spell the word "bolt" I get struck by lightning, if Twitch chat spells "clear" my inventory gets cleared, and finally if my chat spells "dead" I die.

8:01 first of all, not all of them do, and those that do make helmets, don't always do that, but when helmets are made, it's for the following reasons:
A. (main reason) Piglins trade iron boots with soul speed, so to be able to keep both the added speed and armor value while not giving up the piglin passiveness.
B. With a treasure bastion's speedurnners will usually mine 1 gold block, and turn 3 gold into a pick, so with the 6 remaining that's the best armor they can craft
C. Gold helmets are the best piece of gold armor (compared to iron armor), so outside of speedruns where you don't really get any armor, people will usually go into the nether with iron armor and a gold helmet, and maybe that habit just carries into the speedruns.

The only correct point is the first one. Yes Speedrunners do make gold picks and they have 6 gold left off a block but they dont care about protection provided from the armor, since top runners only take damage from pearling (rarely from fall damage, maybe ghasts and skeletons being the only mobs that could be an issue) and the only bastion that requires you to precraft armor is the bridge type, but before crafting anything you’ll have around 11/12 g blocks so there’s way more than 6 gold left.

8:40 fsg seeds are determined with a specific route in mind. There's usually a nether enter extremely close to spawn, so because you didn't find it, and ventured out, the bastion and fort are back at spawn and too far away from you
