On an open map where CA can hit and run for days it's hard. It was like that in real life also. Warfare on the eurasian steppe was all about horse archers. Shock cavalry were held back only when the enemy was sufficiently weakened by missile fire. And even the heavy cavalry were horse archers first, lancers second.
Viper hasn't won against Hera in ages, and you can see the lack of confidence he has when playing him. His chat is so negative during play, he lost like 5 minutes after the game started. Viper needs to remember the times when he could win from any position, even when everyone thought he was out of the game. He should focus less on strategy and more on regaining the confidence that he can beat Hera, and the rest will follow. So, Viper, start building your confidence back and stop being so negative about your gameplay when facing Hera.
I think the issue is actually the opposite. You can see Hera playing defensive, making the better unit composition or saving low hp units after fight. Compare that to no walling, choosing melee units with bad pathing or throwing units for free. There was a time when Viper was clearly miles ahead and could still come back and win games. Now the gap is so narrow that you can no longer repeat that. To me that's over confidence in own ability, not under.
I think viper hasnt made the best choices lately like units or hate to say it, walling. still, my thought is that vipey is playing the long game here. He will show better skills and strats in tournaments.
Elo is your ranked rating. The higher the number, the better the player is. You get elo by beating players and lose elo by losing to players. Elo also determines who you play against, you only play against people close to your elo. I Hope this helps.
I've never seen Knights work against Cav Archers.

if knight is on the attacking side, it's different story

Elo is your ranked rating. The higher the number, the better the player is. You get elo by beating players and lose elo by losing to players.
Elo also determines who you play against, you only play against people close to your elo.
I Hope this helps.
