I used to get frustrated when the restaurant would call INSTANTLY and make you stand there for 20 minutes, especially restaurants that wouldn’t let you wait inside.

They would have had to do more paperwork to pass it with a good level, but everything was legal. Just not the false advertising using ready meals!

As a consumer there's a certain amount of due diligence you are responsible for before consuming anything not just food. To rely solely on a company to hold businesses and people to a certain standard of ethical and hygiene practises is naive. For instance, there are numerous places with certificates of health and safety that I personally wouldn't eat from. You wouldn't go into a restaurant with out checking the certifications of the business or observing their state of cleanliness and they way they conduct themselves, right? So why is that any different from ordering online? It isn't. You place too much trust in corporations and others to do the right thing by you.

The dark kitchens are called dark in part because they backend service sheds. They can have professional kitchen staff and kitchen equipment. Heck they could even potentially pass hygene checks, though they normally wouldn't be in line for it. It's basically a way to run a kitchen with a lot less administration or customer service departments.
With the amount of work you put into establishing this "fake" restaurant, you may as well have started a real restaurant. It looks like you were more than half way there.

You are incredibly clever. It is so unbelievable how easy you set that up. I own restaurants in France and it was a nightmare to get started. There are courses that need to be taken and passed before being able to open a restaurant, and months of waiting and paperwork. Wow !

@@falconman407 Had they continued for much longer they would have drowned in orders. There's a difference between having nothing on hand, and having too much on hand. Food waste is bad, but you still have to run an efficient business. Personally I would have pre-bought any meals that I would be willing to eat if they weren't ordered, and only ran out to buy something that I personally wouldn't eat. This would provide a good balance between "not leaving delivery drivers waiting for you to run to the store" and "overpurchasing and then throwing out or returning the extra". Although this system might have worked better if they just had 1-3 extra people.
in singapore these companies do a lot of checks, coming down to the restaurant multiple times first to sign the contract, then to take photos of the place, menu, licence and hygiene rating etc, and first training session. but because we’re such a small country it’s easy for their staff to travel anywhere. whereas in bigger countries like malaysia, verifications are some online, training is also done online, the device and bags are just mailed to you. i guess that’s exactly what happened here in the uk too.

I own restaurants in France and it was a nightmare to get started. There are courses that need to be taken and passed before being able to open a restaurant, and months of waiting and paperwork. Wow !

@@falconman407 Had they continued for much longer they would have drowned in orders. There's a difference between having nothing on hand, and having too much on hand. Food waste is bad, but you still have to run an efficient business. Personally I would have pre-bought any meals that I would be willing to eat if they weren't ordered, and only ran out to buy something that I personally wouldn't eat. This would provide a good balance between "not leaving delivery drivers waiting for you to run to the store" and "overpurchasing and then throwing out or returning the extra".
Although this system might have worked better if they just had 1-3 extra people.

in singapore these companies do a lot of checks, coming down to the restaurant multiple times first to sign the contract, then to take photos of the place, menu, licence and hygiene rating etc, and first training session. but because we’re such a small country it’s easy for their staff to travel anywhere. whereas in bigger countries like malaysia, verifications are some online, training is also done online, the device and bags are just mailed to you. i guess that’s exactly what happened here in the uk too.
