I recently made a desk mat for a coworker. I tried to skiv the edge down to fold the edge like you do and failed miserably. I dont have the skills to skive 30+ inches evenly without mistakes. I ended up just burnishing and polishing the edges and doing stitches for the look. Turned out alright for my first mat.

What tool are you using to skive?
@80ProofGoods I have a Japanese style skiving knife. I think if I used one like your French skiver I might of had better luck.
