Highly suggest leveling the ground, using leveling sand and gravel to hold the pavers in place if you plan on having the veggies beds for more than one season!
Also worth considering adding topsoil to the entire edge of your property so the slope isn’t so dramatic, just make sure you keep a grade for rain! You can get them delivered by truckload.

Just a heads up the cucumbers get huge so it’s going to suffocate your pepper plant. It happened to me to where it was hard to pick my peppers
Potting mix is actually great. I use that and/or raised bed mix. It's made for better aeration for compact areas & usually has fertilizer. I believe. Garden soil can be mixed in to reduce the cost, though.
also, zucchini and yellow summer squash don't need trellises, so you could move those trellises to your newer bed. Sorry if I am misremembering your layout! But I think your first bed was just summer squash? The winter squash and melons are climbers. A lot of summer squash varieties are what is called a "bush habit"/bush shape.
It would probably be less expensive to have soil delivered and maybe you could get mulch to cover the ground so you don’t see the pavers.
It's funny how stuff like this I want to do but also don't...like I'll imagine myself gardening and watering and chopping and such but then when the time comes to actually do it, I feel like I already have because of how much I was imagining myself doing it and then I'm already exhausted 😂
Also: if you have any extra plants idk if you have mentioned giving them to people, but maybe friends family or neighbors would love a little plant to transplant!! Then it wouldn't go to waste!
I thought about doing that with all my extra herbs bc it's kind of an easy and special thing people might love!!

You make me miss having my garden. I used to have lettuce, tomato, melons, squash, corn, green onion, green beans, and snap peas.
It looks so good!
You can also get them delivered. I was 39 weeks pregnant and needed mulch and they delivered it for pretty cheap.
Prune any leaves that touch the ground to avoid pests and disease.

You're doing awesome! I love to see it, but I think another reason why you shouldn't plant certain things next to each other is because like your cantaloupe could taste like a squash. And if you plant squash and watermelon next to each other, it gets precarious look into it a little bit like cross pollination and then they're just not as good. Good luck!!
Common misunderstanding! The cantaloupe would not taste like squash. Cantaloupe is a melon. Squash is not. They physically cannot cross pollinate. They are too different. Cantaloupes can cross pollinate with melons only. Same for squash and watermelon. It literally cannot happen. :)

Have you considered that the cardboard boxes you are jusing under your soil are toxic to the vegetables you are growing and eating..?
In Denmark they do not recommend doing it unless it is fore flowers but they won't last fore a long time because of the chemicals I the cardboard boxes.
Mabey you haven't heard it.

That is not a concern. They are commonly used in the USA under garden beds. It's totally ok over here! We just try to remove tape and plastic labels when possible. What is toxic in them for you guys?
