Texas hold 'em could be a fun game to play with casino sulky and a few cameo chracters. I'm probably suggesting something a bit ambitious though. Texas hold 'em passes dealers each new round, could give each character a turn to shine on their deal.

In F:NV the building next to taken over hotel( the sherif quest has to be completed (I don’t think it matters what side you chose(it’s either NCR/prison/the bot inside of casino)) can be turned into casino after waiting 2+days (it will make deserter NCR spawn wich you can either kill or make the go away with few speach checks) and after few days (3 I think) it turn into casino (it’s 5000 caps max win I think)
It might be jarring but as someone who usually leaves a casino with a hair more money than they brought in. The sound of the roulet ball going around is addictive.
