Thank you for your kind words and welcome to the channel! To answer to your question, I fertilize with every watering all year round. Since the watering frequency is reduced in winter, the amount of fertilizer the orchids receive is naturally reduced as well as a consequence. The fertilizer I use is made up of 5 parts of MSU fertilizer and 1 part of BetterGro Orchid fertilizer. The dose is 1 tsp/gal of water. I use tap water, which in my place has a TDS of about 350 ppm and a PH of about 7.5. My 'home made' fertilizer lowers the water's PH to about 6.5. About half an hour after the watering, I then flush the pots with just tap water to prevent salt build up. I water only when it's warm and sunny and the plants are receiving direct filtered sunlight, to help the leaves dry up fast. I hope this info may help you with your orchids as well.
