For my experience, Italians always get triggered when someone tries to make an Italian meal, if they do not make the recipe like their grandmother, with the freshest ingredients, it's not Italian food, and they get upset hahahahah
Im italian and i can tell you, i would gladly eat every dish you made, everything looks delicios, if you want pure criticism i'd say that almost every dish you made had the recipe not followed perfectly YET i like your style a lot, quick, a little bit random and interesting, i'd say 8/10. Dear sir, as an Italian I give you my congratulations on your cooking skills, especially on how you prepared the pasta, "che il signore sia lodato". But you can't call it an Italian Feast without some good red wine and don't mind those critics that are complaining that you didn't change the water for the pasta or how you did the sauces, they are probably people that never touched a pot or a pan in their entire life. As an Italian who cooks Italian dishes a lot I think you did a great job for he most part. A few things I would recommend doing when making red sauce is to add white wine, cream, and some chili flakes to give it a great acidity, color, and touch of spice. Also, the mark of a great pasta dish is when the pasta flavor is an embodiment of the sauce. So when cooking any pasta dish it’s good to finish the pasta with the sauce in a frying pan. Overall though, your pasta making skills are very good and you should be incredibly proud of the absolute feast you have made. (I hope you get a few hungry friends to come over and eat that food)
If you're an Italian as you claim you should know that no-one makes rigatoni with sausage like that, ragout is made with miced meat, celery and carrots, baguette is French and hope that if an Italian chef is watching they skip the part where you put PANCETTA in the SEA food sauce, it comes from the pig! Obi Fidler yeah I know that he didn’t cook traditionally, (bratwurst with rigatoni and stuff).but I think that he knows that and chose to cook with what ingredients he wanted. I don’t want to act like a pompous traditionalist and point out all of the non-traditional things he did, because I think he knows this is not entirely traditional. I just am here to give suggestions, not to correct. And btw, you can put pancetta in a shellfish dish. Pork is used in shellfish dishes all of the time. Trust me, if you go to a nice Italian restaurant that has a clam dish it will have pork sausage in it or bacon.
As an Italian I appreciated you putting your own spin on these dishes! The best way to honor a dish is to put your own spin on it and make it personal! Plus the thing that makes Italian cooking so special is the experience!

The meat, cheese, and vegetable plate is usually called anti-pasta. Capicolla is a type of cured meat and can come in sweet or hot varieties. Otherwise, you would do any Italian grandmother proud. But get some dessert next time. Some tiramisu or cannoli.

Italian food, first and foremost, is making some delicious with what you have. There were many times the antipasto had American sliced cheese and ham because hey, that's all we had in the fridge, and we wanted something to munch on while playing briscola. I'm Asian by blood but I was born and raised in Milan, Italy and I think you did a fantastic job here! Especially for the fact that you actually made the pasta, the baguette, the sauce - literally everything from scratch instead of buying them from the stores like everyone does. That's a huge plus for me. For the specific way of preparing the food, eeeeh I can't really comment on that cause I don't know how to cook (I only know how to eat lmao) but in the end, what matters is that we're enjoying the food we're eating. This guy knows how to cook a dozen types of food from different countries, and yet he gets a bunch of angry Italians raising their pitchforks and insulting him. One thing non-traditional or "wrong" and they go on a tirade. And you wonder why Italians have such a bad rep in these types of videos.

A tip for the next time quang. The fresh basil (or any fresh ingredient) goes better at the end in the sauce, because if you put them at the beginning they lost all their flavour. Much love, and as always, great job.

What kind of Italian would approve of fish sauce and beef broth in sugo, rough housing all the pasta, letting it stick to itself, and then saying to rinse the pasta in cold water? Everyone knows you never rinse pasta. You aren’t ready to eat it? Then don’t cook it until you are. Or dry it. Or freeze it.
well what you do is cook the pasta and add a little oil in the. boiling water so it doesn't stick.... then when your done you rinse with cold water so the next day they won't stick

I'm Asian by blood but I was born and raised in Milan, Italy and I think you did a fantastic job here! Especially for the fact that you actually made the pasta, the baguette, the sauce - literally everything from scratch instead of buying them from the stores like everyone does. That's a huge plus for me.
For the specific way of preparing the food, eeeeh I can't really comment on that cause I don't know how to cook (I only know how to eat lmao) but in the end, what matters is that we're enjoying the food we're eating. So, 10/10 from me! And a subscribe.

This guy knows how to cook a dozen types of food from different countries, and yet he gets a bunch of angry Italians raising their pitchforks and insulting him. One thing non-traditional or "wrong" and they go on a tirade. And you wonder why Italians have such a bad rep in these types of videos.
You've misunderstood us, food to us is sacred I dont know if you understand but theres a reason why many of our techniques and dishes take years to master even for world class chefs that have stated it themselves food is special, the video is a bit offensive to our people but keep in mind we come with good intentions, I cant speak for everyone of course sorry if they cost you any trouble; people in the comment section dont represent Italy keep that in mind, were just the minority on this platform so it's easy to judge.
To clarify it isnt Italian cuisine just because you make a bowl of pasta that is not what Italian food represents.

A tip for the next time quang. The fresh basil (or any fresh ingredient) goes better at the end in the sauce, because if you put them at the beginning they lost all their flavour. Much love, and as always, great job.

I am Italian and everything in there I would eat besides the New Zealand muscles because I sadly don't like them, I do know that if you want to do a Italian feast you must have red wine, but it is your version and I appreciate the money you put into it and the time because I will definitely be coming back to make some of these. well what you do is cook the pasta and add a little oil in the. boiling water so it doesn't stick.... then when your done you rinse with cold water so the next day they won't stick
