In this video, I show you how to make Irish stew. This vegetable stew recipe is hearty, satisfying, rich, and perfect for St. Patrick's Day recipes. Traditional Irish stew is made with beef and Guinness beer. Obviously beef isn't vegan, so I skip that and replace it with hearty vegetables. And beer isn't (believe it or not) isn't always vegan either as they sometimes use isinglass (fish blatters...ew) to filter the beer. Guinness is currently in the process of changing their recipe to be vegan. I know it is vegan in some areas but not yet everywhere. In my vegan stew recipe, I used a local beer which is vegan-friendly.

Hi Sam. I just made this tonight and it was beyond amazing. Even my carnivore hubby was amazed. I did add some homemade dumplings to it and that took it over the edge :-). You truly are my favourite vegan chef. Everything is just so easy to follow with ingredients that are easy to get. A big thanks and a Happy St Paddy's Day. Sue
Oh yay!!! Thrilled you enjoyed it so much. So flattered I'm your fave!!!! Happy St. Paddy's day, Sue :D
@It Doesn't Taste Like Chicken
FYI: Near the beginning you said that you used three smaller baby parsnips instead of two large ones like you had recommended in your recipe…
I thought you would be interested to learn this which I just read on the internet regarding parsnips in general (I’ve never had them before in my life, so I wanted to read up a little bit about them):
“First things first: Look for straight, small parsnips. This may seem counterintuitive, but large parsnips typically have a thicker, woodier core that’s less tasty and more difficult to chew and cook with.”
“To prepare a parsnip, avoid peeling it the way you would a carrot-you might accidentally strip away some of the best flavor. Instead, grab a vegetable brush and scrub, scrub, scrub.”
@It Doesn't Taste Like Chicken
Also! I just read on the internet that you were incorrect regarding Guinness… as of January 23, 2018, when the article was written that I read online - Janice announced that vegans could be sure that ALL Guinness around the world is now vegan and there isn’t any worries anymore on that front (whether you buy it from the keg, or in cans, whatever - it’s all vegan). That article came out in January of the same year (2018) that you made this video (your video is in March), so you were just a little bit behind the news is all.
Dumplings good idea !!!!
Sam, this stew is absolutely amazing in its simplicity. The depth of flavor is amazing, and the mouth-feel of the gravy is just perfect. I doubled the recipe and added about a tbsp of tamari sauce and 2 tsp of Kitchen Bouquet for a touch more umami. Delicious! I just recently discovered your channel and website. I have already purchased your cookbook and have downloaded and made several of your dishes. Please keep the recipes coming!
I want your brightness to hug away my darkness
Lovely recipe & vid sista! Great editing too ;) . . . Have a happy St. Paddy's Day
Thanks brotha! Haha. Happy St. Patrick's day to you too! Can't wait to see more vids from you :)
Your a legend girl cooked it twice and absolutely awesome thanks for this quick but stunning meal
Love it to bits, rocking it for the Aussies down under
That gravy looks amazing!
I'm in the process. of converting my husband to vegan . With a little tweak to make it my own you my sweetheart are jazzy hands, the peak of the horizon and cookin genius. Tkyu my love
Thank you so much angel clouds!
OH MY GOODNESS YOU JUST SAVED ME WITH THIS RECIPE YOU HAVE NO IDEA
This was really good! I did have to let the stew simmer for a while longer and add more sugar to reduce the bitterness but the end result was fire!
Yay!! I love Irish stew but try to avoid meat...I really appreciate this!! 👏🤩
Thanks my friend im gonna make this
Can't wait.
Yeah this one too. Will make soon.
in most cultures the traditional recipes do not include spirits or beers until times the culture is thriving enough to get all that stuff going. So irish stew, particularly very traditional Irish stew, really isn't characterized by stout beer, but rather actually usually very simple ingredients. Stout beer is a whole U.K. thing where Porters got popular and the strong ones were deemed "stout" porters, so the strong, "stout", roasty ones... just read about that. I also read up earlier on another study that the Czar of Russia traveled to England at one point and that that is how the Imperial Porter and/or Stout (Porter) that is prepared the Russian way came to become popular in Russia because he enjoyed drinking it so much that he brought some to his wife I think and then to the Russian navy. Pretty interesting stuff if you ask me. I don't mean to correct you I love your recipe. One time I told someone real loud & proud that "traditional stroganoff dishes have white wine" in them while someone tried to argue that a white sauce based sauce, the one used for stroganoff would pair better with red wine and totally while I walked away it got to me that I had been wrong to say.
Humans are so interesting trial and error always.
& that's exactly how stout beer was invented, brewers made more and more porters until they got to think about brewing them and roasting ingredients at different strengths and now vegan Irish stew recipes can have their delicious cooked savory porter ale broth flavor!
This looks amazing!! Have a Happy Saint Patrick's Day, Sam!! ☘️☘️🍀☘️
Thank you!!! Happy Saint Patricks's day, Lucia! :D
Looks great
I love your vids Sam!! I first came across your channel through your blog and came across your blog through a google search... I was having some trouble with being vegan at social gatherings, and you commented back and helped me! You are so sweet and I love your sense of humor :) Your vids are so bright and cheery and I can always watch them when I just want to forget about everything. Thanks for making these vids
Awww that's so lovely, thank you so much, Jennifer!! So happy you found me, and so happy I can help you a little, even if just by brightening your day. Thanks for enjoying my videos :)
Is there a substitute for the beer please?
I'm irish. The stew looks perfect but I never use beer, flour, brown sugar, tomato paste or mushrooms in stew. Not sure about thyme or bay leaf but pepper yes. Also we let it simmer for a long time. 15 minutes is very short so the vegetables don't have much time to add flavour to the broth. Worchester sauce goes well with it for dressing. A few extra potatoes on the side help fill you up. Its a simple dish
i love this so much. when my mam makes stew she has mash potatoes with it and it’s just something else 🥵
Finally I made your recipe! Delicious! As I live in Japan, I made some adjustments but it went good. Thanks!
I don't get the olive oil comment! Yes traditionally Irish would use lard or goose/duck fat but Hey, Vegan! There are so many flavours in this that by the time it's stewed for a while you can't taste it anyway.
Absolutely! Agree. You could also use any vegan friendly oil you prefer :)
your a legend, thanks , i subbed :D
This looks a bit like one of my vegan recipes I use sometimes. It’s a vegan version of Russian chicken stew. In my vegan version I use mushrooms instead of chicken. I like the meaty mushrooms like shiitake, Portobello, and sometimes if I can find them, fresh chanterelles. I also use some dry porcini mushrooms for this dish. For my dish I use vegan products, and I try my best to make sure all of the ingredients are organic non GMO, even the herbs & seasonings. It includes fresh carrots, onion, celery, good amount of potatoes, fresh garlic, veggie broth, fresh tomatoes/or canned, fresh parsley and cilantro, 1/4 cup of of frozen peas, 2 tablespoons of tomato paste, and 1 of the vegan non-chicken bouillon cubes, or more if you wish. I sauté the mushrooms & onions with 2 or 3 tablespoons of vegan butter for a while until mushrooms appear fried or caramelized and meaty. Cook mushrooms first for few minutes before adding the onions, because mushrooms take longer to cook. Then add all of the tomatoes & rest of the veggies & garlic, and cook for few minutes. Than add veggie broth. I take some of the veggie broth in a separate cup, to dry bay leaves, seasonings to your taste, and add the bullion cube, and 2 tablespoons of tomato paste and microwave it for one minute, then take it out of microwave, and mix it really well and pour it into the stew. You can add salt to your taste, but be careful because the bullion cube and the veggie broth may already be salty. I usually add a good amount of onion powder, and garlic powder, and other seasonings. Depends on what I have in my pantry at the time. I may add just a tiny bit of rosemary, and definitely add two bay leaves. Keep it on low heat for about an hour or maybe even hour and 30 minutes. You don’t need to add any cornstarch or anything for thickening, because the tomato paste and the potatoes will do this job. Forgot to mention to add half of the fresh parsley and cilantro while it’s stewing, and then add the other half of fresh herbs when the stew is finished and removed from heat.
excellent
WOW !
Watching this I realized that I have made lots & lots of soups since going vegan but surprisingly no stews!? This one looks perfect for this weather too...looks like I found my 1st stew! 🙆
Yay!! You're first stew, I'm honoured! I hope you love it :)
Same! I forgot about stew and now I miss it! Can’t wait to try this recipe.
looks delicious!! and it’s getting cold down south - this stew is perfect for our coming winter ❄️
Awesome! I hope you enjoy it!
Made this last night for my family! It was so easy and tasted amazing! Thank you!
So I had to substitute a lot of ingredients cuz I didn’t have them, but I still wanted to make a nice stew. So I followed the general proportions, swapped out some stuff with more Asian ingredients I had, used the same techniques, and it smells and tastes soo good!! I love how easy it is to follow your recipes and how flexible they are! Even though it wasn’t exactly the same (taste wise), a lot of the things in the video are pretty versatile and so helpful for teaching me how to cook! Love your vids so much!!
I am irish, to suggest an Irish stew be a vegan stew is beyond egregious!!!!
Is there a substitute for the beer?
This is a fabulous recipe. All of our friends love it too.
This is so good!! I have made it in the past and knowing St. Patty's Day was a few days away, I hoped you would do this as a video! Will making this for our holiday celebration. It really does taste like my mom's beef stew with gravy! I must confess, I do add your tofu crumbles to this recipe and they make it seem even meatier.
That's wonderful. Thrilled you enjoy the recipe so much, Joanne. So happy you don't have to miss out on the experience of your mom's stew :) Haha, everyone is obsessed with those tofu crumbles!
It's st Patrick's Day or Paddy's Day not pattys us Irish hate when people say that
A sorrel garnish would be so fantastic for this I feel like maybe. I ate a four leaf clover when I was a kid and then later in life ate sorrel and the taste is near identical so I guess it would be just to reminisce that feeling. I wonder if anybody eats good clovers though or if there is any reason not to in large quantities because that would obviously be even better! & that sure would make it look Irish!
I love your vintage kitchen
Thanks!
Great recipe!! I ended up adding chitpoltle powder, cumin and a bit of smoked paprika. Along with a bit more salt than specified. It was amazing!!! Definitely my new GO-TO hearty meal. :)
I made this tonight with a few modifications, the most important one: i replaced the beer with an Affligem Tripel, much more garlic and changed the amount of the ingredients here and there. But thank you for this idea !!!
This looks amazing and is going to be delicious for my first vegan St Patrick's Day!!!
Yay!! I hope you love it! Congrats on your new veganism :)
Thanks!! It has been the best decision I have made for myself!!
Love your channel and your book by the way!!
Do you know that they put metal cobalt for making bobble?
I just cooked it but didn't have any mushrooms and I was way too lady for going to the store for some, but instead I used impossible ground meat and holy gee! It was amazing. Gotta use mushrooms with it next time. Thanks for your recipes... not only gorgeous but soooo funny!
This stew is so good I love it
I love your energy! You seem like you really enjoy cooking♥️ can’t wait to try this recipe tonight!
does anyone know a good replacement for the stout beer?
I tried this today but it had a bitter after taste :/ would adding more sugar help?
Sooo trying this!!!
Yay! I hope you love it, Lisa :)
That stew looks legit and so simple. The only thing different is I'd add soy curls to get that meaty texture. Gonna try it as soon as I find some stout beer.
That sounds like a great addition! I hope you love the recipe! Be sure to let me know how it turns out for you :)
Check out Sam's recipe for tofu crumbles - they work really well in this recipe!
So I made this yesterday in the slow cooker and it came out really well. The whole family enjoyed it. I should have doubled it bc I didn't have any leftovers. Thanks for the great recipe!!
Looks delicious!
Thanks, Tamara!
Looks delicious! You can also keep the skin on the vegetables as they are very nutritious. Thank you for sharing.
Your videos always brighten my day :-)
Yay!! Best ever!!! :D
This was amazing!!! Making it again tonight! 🙏❤️
i like the way you count the tbsp of olive oil. i'm italian so we dont usually use recipes. just eyeball it or go by taste/smell lol.
Yes! :)
I would love to see more Asian vegan recipes.
Thanks for your vote, I will keep that in mind :)
Looks so great n hearty! ❤️❤️❤️ your energy tho 😘😘😘😘😘😘#loveit
Aww shucks, thank you so much, Mia!! :D
I'm definitely going to try this this week 😍!
Yay! I hope you love it :)
always "THE QUIET MAN" on St. Paddy's Day. Tried "BROOKLYN" but it made me cry.
A friend made this for me at a dinner party over Christmas and it was suuuper sweet! I’m wondering if she added two tablespoons of sugar instead of two teaspoons. Lol Definitely going to try it again!
Haha, maybe! It's not at all sweet. The tomato paste and beer are both very bitter, so the brown sugar just cuts that a tad.
Stout beer what’s that?
I like this recipe, really tasty :)
Yay! Thrilled you enjoyed it :)
Is there a link for the ingredient list? This looks amazing and I definitely want to try making this.
Awesome! The full recipe is always linked in the description below the video: bit.ly/VeganIrishStew
On my list for tomorrow... Looks incredible. BTW luv the kitchen... I'd almost ( ;-) )kill for a gas stove.... Can't wait - will have to bake up some Buns (rolls) to go with it... Thanks for the Video and recipe.
Yay! I hope you loved it :D
Hey, Sam! Can you make a vegan version of Borscht?
I'm not vegan I do like trying new things
Your personality is adorable! How am I just finding you??
Thank you so much!!
wow you look so happyyyyy omgggggggg girl you're sunshiiiiiiiine
I learned how to make this dish from an Irish woman called Lortay DeShamaugh
I’m preparing this for me and my wife for st.patricks day. The veggies seem to take a long time until it becomes tender, I’m simmering it for 1 hour now and it’s still not done. Hope it comes out alright
An hour! It definitely shouldn't take that long. With a simmer, you should see light bubbling- just want to check that you are cooking it hot enough. Veggies don't take that long to be fork tender. I hope it turned out for you!
delicious
I can see her burning the house down and still giggling about her mistakes
vegan Irish soda bread would go great, can't wait to try this, thanks Sam
Oooh that would be perfect! I hope you enjoy it :)
lol Love the Veggie Broth lol
Veggie broth- well known to be white and powdery. Hahaha!
Of shopping now making this tonight and freeze 5 days worth.Changing brown sugar for honey and addind smash potato
Enjoy!!
@@ItdoesnttastelikechickenFinished cooking at midnight uk time in slow cooker, waited until midnight to eat(to bowls/crusty bread)manage to freeze two tubs just eaten one for tea.
Ale,honey, puree, bay leaf, thyme makes this stew a satisfing and sweet.
You know, I don't think there's a single piece of meat in this stew. Looks like meat. Tastes like meat. It isn't meat at all. Doubleplus good!
Haha!! No meat at all, just the good stuff (veggies) ;)
I LITTERALLY ONLY HAVE LIKE BLACK BEANS BELL PEPPERS TOMATO PASTE SCALLION purple onion and carrot in the fridge and im like freaking thinking what am i gonna cook tomorrow
Irish stew does NOT have beer in it.
This is guinness stew, which is a Irish version of a stew from Belgium.
Can someone explain why there is a need for vegan beer? Isn't all beer vegan?
Beer? Do kids like this? I have never used beer in a recipe but it looks amazing 👏♥️
I don't have kids so I don't know first hand but some readers said their kids loved it. :)
Aw I shoulda watched before I made my first attempt tonight I like how you thicken with flour and I also forgot potatoes this time but anyway my first attempt turned out amazing, anyway
Substitute for beer please
Have you ever added any seitán or other meat substitute to any stews or soups? I was wondering if some toasted jack fruit might be tasty.
I haven't but I am sure it would be yummy :)
Watching this now b/c St Paddy's day is almost here! Could I put caraway seeds in this too? Since I haven't made this before just asking. ;-)
Keeping going hun
It Doesn’t Taste Like Chicken you always so lovely
Thank you, Zubaer!
Hey Sam made your Shepard pie n made it my own. I'm from Scotland where can a get your book
slinkysfx Collins just look up amazon
Beautiful recipe, I would add some seitan
Just found your channel as I was looking for a vegan Irish stew. Sadly, I won’t be making as when I go to your blog to get the actual recipe you have your blog set up where you attach more than 100 advertising cookies and it takes more than 200 clicks to opt out. And this will happen every time I visit your blog for anything. It is a real pain and just not worthwhile. Thought I would mention it in case others come by not wanting to waste their time. I have no problem paying a small fee for a recipe, but 3 months to a year of the cookies being added to my computer unless I send 35-40 minutes to opt out individually…nah, thanks anyway.
@@8yearsago153 it is because I am in Europe. It is not pop up ads, a single pop up cookie alert, but filled with over 200 clicks worth of vendors one has to do to avoid advertising cookies on their machine. You see, over here one cannot attach advertising cookies without permission, whereas in the US that is not a law and many bloggers and websites do it to make extra money from their blog or website traffic.
To opt out of cookies on her blog, when the cookies notification pops up, one needs to open each vendors name, click to turn the permission off, (sometimes just one click per vendor, other times it is two clicks), then go back to the vendor list and go to the next one, repeat the process, on and on. This takes a good deal of time to do if you do not want your machine filled with companies spamming you with ads everywhere you go. I have spent so much time clicking to reject these advertising cookies in the past I no longer bother with bloggers who do this as it just is not worth it. I learned not long ago that some bloggers are unaware of it going on from their blog (it is the company they set their blog up with that is doing it, not them) where other bloggers have knowingly done it as it makes them money to do so. Each of the vendors (advertisers attaching the cookies) has different lengths of times their cookies are active on the person’s machine. For example, Amazon on some is for 3 years, while a more obscure company could be just 3 months and some even just 24 hours. But each time you go onto the blog, it puts the time back to the beginning, so giving them another length of time they chose, to stay on the system. Just to opt out of the advertising/commercial cookies, it takes 30+ minutes. And when you get the recipe you want or read the post you want to read, if you save it into bookmarks to return to it or you just go back to the blog in the future, you have to go through the 30+ minute opt out. It is a real pain and is akin to a cross between being accosted in Duty free at the airport or going into a shop that sells perfumes and colognes and having their staff accosting you with it to try and make a sale, and the constant fliers and other junk mail through your mail box or placed under your car’s windshield wiper…but worse because they are stuck to your machine or you spend all your time clicking to avoid getting them.
This looks so good!!! Unfortunately, the suggested flour substitution for gluten free wouldn't help much since the beer isn't gluten free! :( I wonder if there IS a gluten free vegan stout out there...
There are definitely gluten-free stouts out there! Kennet & Avon Savernake gluten free stout is both gluten-free and vegan :)
Thank you, this celiac girl really appreciates the info!! :)
I love your videos and your spirit! You make me smile every time.
Yay!! So happy to hear that. Always great to be able to bring a smile to someones face :)
garlic in an Irish stew, dont think the Irish used garlic!
Neither did the Romanian and they got Dracula! So use garlic!
you look like Pandora from skins :) you both are pretty. this looks good
Thanks!
Hi Sam! Is this in your book?
3:15 POTATO DOWN 😂😂😂
the accent on her "r" is so cute
Danny you’re cute
Call that a parskip
Irish stew (lamb) does not have any beer in it. You are talking about Guinness stew (beef) 🙂
I made this but my only vegetable is potatoes
Can you add kidney beans for protein?
Sure! But just so you know, all plants contain protein :)
Recipe good but they back ground music is a little too loud when trying to listen to you. Good work other wise
That background should be louder.. as she is fucking annoying
POTATO DOWN!! 🍠 `🚑"..
😁👍
Your link to your recipe has been blocked by my browser. Oh well I will have to find another one.
You don't need to find another one. Just watch the video! It's not patisserie so you don't need exact quantities.
