    Splendid! Loved the fact how he visualised the use of its derivatives with a simple presentation of the each sauces. Can we get a segment for sister sauces for bechamel, tomate, veloute & espagnole next perhaps? 😬

    Fantastic video, deserves more views. There’s also sauce maltaise and some with sherry, never tried them though

    How the heck do you measure equal amounts of white wine, white wine glaze and peppercorns? Give us actual measurements, like a decent man!

      It’s half white wine and half white wine vinegar with peppercorns. He said just after to reduce it from 500ml to 100ml. So the recipe is 250ml of each…

    You can't make a Bearnaise sauce simply by adding RAW tarragon and RAW shallots to Hollandaise. It is not the same.
