POGACHA BREAD. Great, light and delicious Bulgarian bread!

  • Pogacha Bread is a delicious, fluffy, light, cotton - like bread that is traditionaly made by hand to greet important guests. Check the video and try to make it - you won't regret it!
    Ingredients:
    - Water 120 ml
    - Milk 120 ml
    - Dry Yeast 7 gr
    - Sugar 36 gr
    - Sunflower oil 120 ml
    - Flour 460
    - Egg 1 pc
    - Sesame/Pumpkin/Poppy seeds 15 gr
    First, mix water, milk, yeast and sugar in a saucepan and very gently heat it while stirring, to no more than 30 degrees Celsious. So that the mixture is slightly colder than body temperature. After that, pour it into the mixer. Add 80 ml of Olive Oil and set the remaining 40 ml aside. Stir for a couple of minutes and add flour. When the ingredients are combined into the dough, add salt and continue to knead. You need to knead until the dough acquires elasticity. You can check this by pinching off a piece and trying to stretch it as thin as possible. See, it becomes transparent but does not break.
    Set the kneaded dough aside for 10 minutes to rest. At this time, we will prepare the workplace, rub the table with olive oil in a thin layer, also rub the rolling pin. From this dough, I make 2 loaves, so lets divide the dough in half and weigh them so that they cook same time. Then form a ball and roll it out on an oiled surface, up to a circle 1 cm thick. Then, cut the dough like a pizza into 8 pieces. Classic Pogacha may be without filling, but I will add pumpkin seeds to this one. We fold each piece tightly, like a croissant, rolling the bottom of the triangle to the tip. Put in a baking mould, for example, a metal ring. Then we repeat the process with the second half of the dough. We will use grated cheese as a filling. In different families, the dough is rolled in different ways, in accordance with family traditions. And we will try a slightly different option - we fold the triangle in half so that the cheese is inside and we also roll it like a croissant, and then put it in a mold. Let the the dough proof and double in size. After that, brush with a beaten egg, sprinkle with pumpkin, poppy or sesame seeds. and put it in the oven at 180° C for 25 minutes. The readiness of the bread can be measured with a thermometer, it must be at least 90° C inside. Let the bread cool, remove it from the mold. Traditionally, pogacha is served with honey or with a mixture of spices called sharena sol or colorful salt it consists of salt, fenugreek, paprika, cumin, thyme.
