Self-hosting Google Fonts (and new variable fonts) without a plugin.

This walks through the process and talks about some of the new and exciting advances Google is making in web fonts. It also touches on a new CSS property called text size adjust that could make the change from system font to loaded font a little smoother.

I dont see my fonts listed on that web page. Does than mean they offer no variable fonts ? UniversalSans

Universal Sans is not a Google fonts. I think it is a commercial font, but I have no idea if they have made a variable version. I would guess not.
