They should have a switch to cut the flaps on touchdown. Just like airliners have to pop wing lift spoilers just as they touch down. That is automatic system that detects rotation of a tire and pop the spoilers to cut lift..
I doubt if any of them are watching their air speed indicator. All by feel. Maybe way back on the glide slope with altitude just to establish the right comfort zone.

problem is weight, in STOL competitions you want to be as light as possible

They range greatly. I dont personally know all of them in the video, but most. And those range from 120hp up to 220.

There is very little risk. The camera angles make them look closer than they are and everyone in these competitions is very skilled.
