I made this last night for dinner and we loved it! I omitted the asparagus because we don’t like it, and the celery because I was too lazy to go to the store to buy it, and subbed fresh for the canned mushrooms. This recipe is an absolute home run! My non-Keto hubby ate two bowls! We loved the flavor of the broth too. Topped with cheese and we enjoyed every spoonful. Thanks for this recipe.

I just finished my first bowl. This was Delicious. I like more spice so season to your personal taste. I used Aldi frozen seafood mix plus
8 extra large shrimp. To take up a notched before serving add one slice of Harvarti or provolone cheese, this won't change your carb count. Finally it was too thick for me added more vegetable stock. Could not find seafood stock in my area. Great Keto recipe, thank you.

This has probably already been said, but DO NOT discard your asparagus ends. Those things contain loads of flavour for broths etc. Just freeze them if you can, like any other parts of vegetables you're not using in your actual recipe, like broccoli or cauliflower stems or leaves.

Hi Anita! It's just a way to keep the moisture inside. If you finished this recipe on the stove top, you'd have to add moisture as it cooked down. Plus, this way you can get out of the kitchen for 30 minutes without having to monitor the pot...lol 😀

      12 spears fresh asparagus
8 ounces canned sliced mushrooms, drained
      1 Tbs oil for sautéing
      1/2 cup diced onions
      1/2 cup diced celery
1/2 cup diced green bell pepper
      1/4 tsp salt
1 Tbs oil for sautéing vegetables
1 1/2 cup seafood or vegetable stock
      3/4 cup heavy cream
      8 Tbs unsalted butter
      1 tsp xanthan gum
      Seasoning Ingredients:
      1 tsp salt
      1/2 tsp ground black pepper
      1/2 tsp garlic powder
      1/2 tsp onion powder
      1/4 tsp old bay
      1/4 tsp cayenne pepper
      Six servings
      Per Serving:
      290 calories / 23.5g fat / 4.26g net carbs / 12.57g protein
      Directions
      Preheat oven to 375°F.
Add seasoning ingredients to a small bowl and set aside.
Prep asparagus by cutting into half inch pieces and boiling in salted water for 5 minutes. Remove asparagus to iced water in a bowl to stop the cooking.
Using a 2-quart oven safe rimmed skillet or Dutch oven, add oil. Sauté onions, celery and bell pepper over medium high heat for about 5 to 7 minutes - or until the onions just begin to turn translucent.
Remove vegetables from pot and set aside. To the same pot, over medium heat, melt the butter. Add xanthan gum and whisk until the butter begins to brown. Add broth, cream, seasoning ingredients, bell pepper, celery and onions. Cook and stir until it begins to thicken. Stir in asparagus, mushrooms and shrimp.
Cover and bake for 30 minutes. Remove and uncover.
Ladle into a bowl and serve hot.

    Hi,
I've noticed in most of your recipes, you use xanthan gum. Why?

    • @PapaGCooking
      @PapaGCooking  4 роки тому +1

Hi Lupe. In my humble opinion, it's a great low carb thickener. Most standard recipes use flour or cornstarch to thicken. While there are other low carb options like arrowroot, glucomannan powder, etc., I prefer xanthan gum. It's actually more common than one may think. Just take a look at the ingredients in in "over the counter" salad dressings or some yogurts. I hope this helps Lupe. Thanks for asking.
