@@346Yoman That's a lot of work just to assemble the shop everyday. Not to mention, he has to disassemble and then do cleaning/maintenance of his shop and equipment.
Everything goes together so well like legos. The time and money spent to craft this Yatai pays off with easy set up and a very nice "building" to stop off in.
Another amazing example of packaging and construction. I would hope he’d find a place one day where he could leave his yatai up and not go thru that two hour setup and probably two hour tear down every night. That’s got to be brutal in the freezing cold or high heat

The speed of building with prefab materials is not new. But the fact that he do this everytime and furthermore keeping it clean are what wow me. Even the floorings are better than most indoors here. I could sleep on it 🙃
I noticed the same thing. Some other Yatai seem to have used random things to make it work, but this one was carefully designed with a purpose. I say nothing bad about other Yatai, everyone needs and abilities are different and the others are lovely for their own reasons.
@@bl6628 almost all the yatai places purposely use hand me down stalls from their parents or grandparents for generations to keep the tradition of the family, but it’s a different story for start up Yatai places ofc
i feel you! this has to be by far the sleekest and most high end yakai i have seen to this point. it doesnt have the nostalgic, anachronistic charm of the traditional, makeshift, naturally grown ones, but an entirely different flavour, i cant deny liking.
Nicest one for sure but real question is - if its good for something other than more work every day....i wouldnt like to build this every day for few hours of work ....that second guy was late and had all done and ready before he finished a roof ....
Impressive work. It's like assembling a giant LEGO knowing by heart where each piece goes. It deserves respect and admiration. Was he the one who created and manufactured? It is also commendable that the city has water and electricity points in the places where merchants set up their workplaces.

This is incredibly amazing. It is built to every details. Look at the painting and scale model of the stall, sound system. Only a person who appreciates quality and a drink place like him will do this. He made me speechless.
That has to be one of the most professional street vendors I have ever seen. Very efficient too. I doubt I would be drinking gin, early in the morning, with coffee and pastries. But, I've never tried it either. Maybe there is something to it.

How much work he must do to keep everything looking so pristine (and cool). What a life lesson for those who just want everything to fall into their lap. Where's the joy in that?
I can see the neighbor setup their stall faster, but he wins the overall design. I believe in the long run, he should find a way to assemble his stall more time efficient. Kudos to the stall owner 👍🏼
Very nice. I have been trying to figure out how to do something like this and this video gave me some ideas. Just to make sure, does he get his water from the city? If so does he have to pay for it, or is it part of his license? My city has certain rules where if you set up something like this you have to be able to wash your hands in your setup (I was only going to sell premade items, but it is still part of the rules) but they do not supply water, so I have been trying to come up with ideas on how to set up a water system.
i just looked it up, apparently they need to prepare it themselves if they want to get the permit. but maybe im wrong tho. maybe you could do some temporary water tank or asked some nearby resident to hooked up some water supply if that okay (this what most food stalls in my country do bcs there's no real regulations of it)
The government is prepared to provide water, electricity, and sewage only in limited areas of Japan. However, to obtain them, numerous licenses and land rental fees are required. ($80 per house). If you want to save on fees, you have to provide them yourself.
I thought it was a ramen stall at first (didn't read the desc). The assembly day in day out is both interesting and exhausting. But then again, the ambience and feel of the stall is part of what you buy
I think it's normal like regular food stall. This is the owner passion. Regular food stall also takes time to build. And preparing. This owner takes his time with his stall. Its really good to be satisfy in what you do and you like. 😆

If it takes 2 hours to put it up and 2 to take it down each day, there is no way this is time efficient. Assuming you work for a reasonable 8 hours after putting it up, thats a total of 12 hours for 'work' not including transport to and from the location. I really do hope this man has a life outside of his little pop up stall
he must have been a contractor before he opened the coffee shop...so precise and every item fit like lego...amazing...he is so meticulous and paid attention to the smallest detail...i think he loved putting up his "home" and treat his customers to fabulous cups of special brew coffee...all the equipment is top class so this is truly his hobby because he is not making enough profit for all his effort...but to have fun and share joy with customers bring happiness and that is his joy and satisfaction...thank you for presenting this video- interesting very zen like just watching how he paid attention to setting up his home and opening up for business
This is one the reasons why japan are special. I don't know about other countries but i am 90% sure that most of the people from my country would not be that diligent to set up the stall everyday. They would just leave the stall there on the pavement closed and locked
Hopefully people from your city will be smarter and know that spending four hours every single day just for set up and teardown. Is by no means profitable. That doesn’t include transportation time and any prep work he has to do.

屋台としては異質なほど清潔感に溢れて解放感もある。しかひ月20日営業すると考えるとすればセットとバラシに月80時間かけていると考えられるが、そうなると賃貸で8万円前後の物件を借りて営業時間を80時間延ばせばそれ以上に稼げる可能性も高いのではないのかと感じました。

ほぼ毎日、運んできて組み立てて仕込みして営業の繰り返しで両方で約4時間組み立てと解体と移動設置に時間使うんでしょう。

ところでこの作業毎回やるのか?組み立てに2時間かかるということは撤収も2時間かあkるのだろうか。年間210日稼働したとして組立撤収含め2時間だった場合で420時間、個別の場合でで840時間。それぞれ2.6人月、5.3人月。初期投資は安く済みそうだが、営業時間、客単価は、時間賃金どうなるのだろうか?
