Sometimes when you pull into camp, all you want is a quick and easy meal that leaves you with as little cleanup as possible. This one hits the mark for me, packed with flavor and some fresh vegetables, that's about all I could ask for.
Camp cooking is one thing I'm still getting the hang of out of the troopy. I'm constantly thinking of something that I wish I had on hand, and I'm realizing how easy it is to blow the budget by simply waiting to eat as I'm passing through towns. Quick and simple meals that make enough for leftovers are definitely key to avoiding that.
